The brown sugar/demera I used wasn't really getting crushed in the creaming process...i cud still see the grains or rather taste them (had used bluebirds brand) .. Is it the brown sugar or the blades of the hand mixer that caused this.. I had to then use my batter spoon to complete the creaming process... Can regular grained sugar or powdered sugar be used as an alternative.. If so what would the quantity be.. Would it be the same as the brown sugar in this recipe?

Have you tried on Amazon? I just buy what’s locally available at Coles / Woolworths in Australia. If you don’t have access to it, you can leave it out too. The only thing that will be different is the colour. You will get a slightly lighter colour cake, but it will still be really delicious.
For a year to keep the dry fruits in rum should we keep it out for a year or in fridge..let me know and should we add rum.often if its kept out..let ne know pls.

Oh my God! this cake was the best thing I made this year thanks to you dear! Really easy recipe if you follow it to the T. Although I didn't have all the ingredients you mentioned, like the treacle, nutmeg, clove powder and the liquid to soak the fruits in where we live so I made do with some white grape juice instead....It won't have the same taste I'm sure but I'm pretty pleased with the color of it and the heady aroma that's filling up my home. Cut the cake today after baking on 20/12/2020. Had soaked the fruits for 11days. Could get only golden treacle . Baking took over 1 hr. Had poured the initial 45 ml rum after cooling the cake completely. Wrapped in cling film. Again fed 30ml rum on 23/12 night . The cake got over in no time ! Very yummmmmmy !

Hi Queenie, I have never added baking soda to this recipe, so I don't know how it would work out or how much you will need. Sorry I can't be more help with this.

Molasses or blackstrap molasses will both work. I have never used that brand, so I can’t provide and feedback on it. You can also leave it out if you like, the cake will still taste great, it’ll just have a lighter colour and a small difference in flavour.
Can we skip caramel and increase sugar quantity. Can we mix alcohol to the cake batter instead of feeding the cake. And in other videos, they bake for longer time like 3 hrs. Is it necessary to bake for so long.

Hi Varsha, I love that you plan ahead. 😊 If you add enough rum to cover all the fruit, then maybe just stir it through after a week and there after, you can leave it to stand without having to stir it through again. And just store it in a cool dark place. When you use the fruit for the cake, you can add your next batch of fruit to the same liquor and just top it off if needed.

Hi Ayesha, its probably that brand that has a coarser grain, no issue with you hand mixer. You can use regular sugar if you like.
