Since everything is basically cooked already; just heating it up to a simmer to place in the hot jars; which go then into the canner that is warming up. If you have heated food; then jars and canner have to be hot or basically warm so you do not have shock inside your canner; aka... jars breaking. Thank you for your question.

do you fully cook the chili ? Or do you let is "finish "cooking in the jars ?
