25 years ago I scored a massive amount of fresh basil - blew through my pine nuts, moved on to walnuts and my last 2 batches were pistachio - it took me over three years to use all that pesto and they were ALL wonderful

I am Sicilian, halfway between Messina and Catania, and I can confirm pistacchio pesto is kind of modern, compared to other kinds of pesto in Italy, I heard of it probably in 2006/7, as it was something very localized in Bronte, Catania. After less than 20 years, as Matteo was saying, you can find pistacchio literally everywhere in Italy and in any kind of dish, both salty and sweet! P.s. I am desperately looking for tickets for Milan’s show! 😂
I actually discovered pistacchio pesto in Naples almost 3 years ago, I think you can also find it all along the almafi coast, lots of (delicious) pistacchios there 😊

Hello i am sicilian's Citizen girl living near Bronte city, the patria of pistachio here. The pesto of pistachio is used a lot here an if i can suggest to enhrich the flavour you can add to the sauce some minced italian sausage made with pork only or some diced bacon and onion cooked a bit on its own and we had cream also to make the pasta really rich in flavour and the sauce not dry at all.
I think I learned how to make her pesto but I kept thinking did you have a permit for those guns? (I never think corny like that, ever, where I even make my self cringe) Arms are looking quite bigger than usual Mr. Matteo.....mama mia!

I learned in cooking school that if you take out that middle part of the garlic it won't give you bad breath. I learned that to make a garlic puree.
