    These look like the cookies of my childhood. I’ll definitely try as your recipes are up there with Laurie Colwin for me and I haven’t had a single failure from your recipes before. Excellent cheesecake and cornbread and gingerbread cookie recipes and I can go on and on:)

      The cookies are going to fly off the tray!!! Really yummy and easy. Use a dark, dark, dark chocolate to have an intense flavor (the sugar is enough to mellow the bitterness of the dark chocolate). Good luck with your bake sale!

    Dear Stefanie,
    Where I live it is difficult to find unsweetened chocolate. Could I use a bitter chocolate (with a little sugar) instead?If yes, should I reduce the sugar amount in the recipe?

      I'm sure that would work, or you could also consider trying two tablespoons of unsweetened cocoa powder mixed to a loose paste with a little hot water, or even better, a little hot black coffee - it brings out the chocolate flavour.

    Mam please tell me is eggs is essential in any cookies orr cake.
    Can we use it any other components which play same role as egg do .

      Unfortunately there is rarely a substitute for eggs in many recipes so in most cases they are required.

      You could replace the egg in this recipe with three tablespoons of plain, unsweetened Greek yogurt, or three tablespoons of aquafaba - this is the liquid from a can of chickpeas, reduce it first to half a cup total volume and let it cool. It's an excellent egg replacement used in many vegan recipes. The yogurt works well too though.

      Oil won't work in this sort of recipe, you need a solid fat to get the right texture.

    I love steff, have for a decade from afar. the mitts, the tone and lines like we have to firm this up. I prefer doing it overnight,log this, log that, everyones oven is a bit different, use a ruler,the inside may still be a little soft.the hand motions. deep sigh.

    I added almond flakes and didn't use any egg. In Asia,we prefer crispy cookies more.

      If you bake them a little longer then stated in the recipe, they will be more crisp.

    I tried your 3-4 cake recipes nd cookies too. What u gave exact measurement ingredients i too followed, out put was very good nd tasty too, but i found very bad egg smell came in all recipe. Step by step how u instructed that i followed by added essence nd beaten well. Even though I can’t able to avoid egg smell. Please give me solutions pls pls pls

      Egg smell is likely due to the quality of your eggs. Eggs shouldn't smell.

      ..apart from the quality of your eggs, some people are quite sensitive to the smell of eggs. What you can do is to add a little lemon or lime zest...or you can add a little grated nutmeg. That will take care of the scent but the flavour of the baked goods might change a bit

      Yes, I've also seen many egg-eaters who can't take the smell when it comes to cakes/muffins with egg. So it might not be just the quality of eggs; you are just super sensitive. Lemon zest should help. Or, try eggless baking!

      It would depend on the type of cookie. Some types are meant to be soft, some crisp, and everything in between. Depending on the cookie, you can adjust the baking time which will affect the texture.
