  • In this tutorial, I demonstrate how to create marbled fondant and how to carve and create a geode "crystal" slice into the side of the cake. Easier than it looks :) Enjoy!

    In these video tutorials, I normally use Bakels Premixes to save on time and costs.
    (Bakels is a bakery grade cake premix. Another great one is Allied Mills)
    If you prefer to bake from scratch, I do have a range of awesome cake recipes here which convert to cupcake recipes very nicely too.

    I use these butter based cakes above because they are sturdy under fondant and stable at room temperature, as are the muds.
    SOFT SPONGE CAKE:

    BUTTERCREAM:
    500 grams butter
    900 grams to 1kg icing sugar
    1 teaspoon vanilla extract
    2 to 3 tablespoons milk
    • Vanilla Buttercream Tu...
    COLOURS USED:
    All in the Americolour Gel Food Colour Range:
    Black
    Electric Pink
    Burgundy (mixed in with some electric pink for the darker pink shade)
    The crystal that were used in this cake are called Rock Candy Sticks. I found mine from a lolly shop called Sweet Box (A franchise here in Australia, but you should be able to find these at most candy stores).

    love the geode 😍😍 can you show us how to make tiered cake with hollow room on the middle? like the 3 tier wedding cake but the second one is a hollow room (hard to explain but I saw it quite often nowadays) 😊

    Im sooooo in love with ur work.... U make iy all look so simple, while its not....!
    Plz tell me if ur cakes are chilled right when ur covering them? My chilled cakes sweat... So it makes my fondant sticky from outside too... Plz tell me where im going wrong.?

      Saima Zakaria omg yes me too!! I covered a buttercream cake straight from the fridge with fondant and it started sweating and like disolving, I couldn't smooth it down.

      Yes, you're supposed have your cakes chilled right before your covering it in fondant. Your cake sweating probably has to do with the temperature of your house. When you take the cake out of the fridge it has to be in an air conditioned and cool setting.

      Honestly, when I make a cake that is covered with fondant, I pretty much only use ganache under the fondant. Doing so has made my life easier. When I do use buttercream, you want to chill the cake just long enough to harden the buttercream without making the inside of the cake very cold. That should cut down on sweating, along with lowering the temp of your room, kitchen or wherever you decorate.

    How weird! I did my first geode cake this last weekend and now you've done one haha. My fingers were too big to put the crystals into the deeper cuts without making a mess of the buttercream. So I was there for what felt like forever inserting sugar crystals with tweezers one by one 😭🤣 I was losing the will to live haha!
    This looks amazing though Rosie! I'm currently attending a fondant cake course and defo want to try covering my final project with marble effect so thank you for showing how to do this :) x

    So beautiful! What fondant do you use? I've made quiet a few cakes and the Fondant almost ALWAYS rips or bunches at the bottom :(. Any advice? Thank you in advance!

    Was this pre-made fondant that you colored, or do you have a recipe for fondant. This looked much softer than fondant I've used.

      Hi hun, yes you can, as long as there are no perishable items in the cake like fresh fruits or fresh creams fillings.

    Hi Rosie. I will be making my daughter's birthday cake next month. I want to cover one of the tier with marbled fondant having similar effect yours, but i would like mine to have a mixture of white, light grey and rose gold colour. While i would want the white to be more than the grey and rose gold, can you tell me roughly the amount of fondant in each colour i will need to roll to cover a 12 inch diameter cake and 6 inch high pls. And what colors should i mix to obtain the rose gold pls? Thank you loads. You are a big inspiration to me. Tc

    Plz, plz, plz, plz.....
    1. tell me where u got ur smoothers from
    2. do a tutorial on how to get sharp edges on a round cake
    3. make a tutorial all about fondant and how to deal with condensation, elephant skin, dry fondant, fondant bubbles....basically the 101 of using fondant
    4. do a tutorial on how to work out how many layers and inches of cake u need to feed ur guests....(i.e. totally selfish i know....but i am a verryyyyy amateur baker and stupidly agreed to bake my sisters wedding cake....for 200 ppl....and my BIGGEST FEARS are
    a. not being able to get sharp edges
    b. my fondant drying out and not looking smooth or thin enough
    c. not having a slice of cake for all the guests!!!
    d. the edible lace i plan to use being a total fail.
    sorry my desperate times have called for desperate measures :(

    Also, anyone who can't find the rock candy you can either crush clear boiled lollies/lollipops OR make your own, just google how to make boiled sweets/rock candy/glass candy :)

    What brand of gold dust do you use? The wilton brand I've used in the past is never close to that pigmented.

    Which cream tastes better? Whipping cream or butter cream?? Whipping cream melts very quickly does that same happens with butter cream ??and can u please make a video on that regarding both the creams consistency nol...

      Thank you so much hun! Buttercream is more resistant to heat that regular cream for sure. It is also stable at room temperature, where regular cream needs to be refrigerated.
