I tried this on a stove using a normal pot and the results were really good. I cooked it for around 45 min, and the congee was creamy .. thanks for such a great easy recipe

I think washing the rice gets rid of some of the high glycemic index starches leaving the more resistant starches in the rice. Some fancy rice cookers drain the water halfway through to get rid of more. They’re somewhat misleadingly referred to as low sugar rice cookers.
I will add ginger next time! Never had one at the restaurant, I make mine with lots off spices and add ons though. I looove instant pot, I usually use it for beans or steaming veggies too, or lentil and pea soups, yum
Normally I’ve seen it served with cut spring onions or shallots or 100 year egg.

I'm use to stove top cooking congee. Is there a taste difference with using the instant pot? Congee is not congee unless it's serve with a couple of thousand year old eggs.
Experimenting with an instant pot right now. I think stove top cooked congee taste better. The rolling boil breaks down the rice and makes it creamier. The instant pot does not come to a boil and water does not evaporate. The water and rice separates. You'll have to adjust your recipe. Less water.

I usually order it when eating Dim Sum, but it's hard to find here in Oregon where I live. I'll make it your way AND using the "Porridge" button to see which way works best. I'll let you know if the program button that you're scared to use :) is better or not. Thank you again and please make more videos. I could look at your face for hours (I feel like a dirty old man:).

Its actually safer not to wash your meat, i was shocked as well when they told me this in culinary school but it made alot of sense why not to.
