INSTANT POT CONGEE WITH CHICKEN

  • INSTANT POT CHICKEN CONGEE
    Chicken congee is a warm and comforting rice porridge, also known as “jook” in Cantonese. This is a simple recipe that is easy to make. When you make congee in the Instant Pot you don’t have to worry about it boiling over and making a mess of your stovetop. You just put the lid on, set the time, and forget about it until it’s done!
    Ingredients:
    1 cup long grain jasmine rice
    8 cups of water
    5 skinless bone-in chicken thighs
    2 inch piece of ginger, washed, peeled and chopped into thin slivers
    3-4 green onions. green part only
    1-2 teaspoons salt, or to taste
    1/4 teaspoon white pepper, or to taste
    Instructions:
    1. Place the rice in the Instant Pot liner, and rinse the rice 2-3 times under cold running water. Wipe the bottom and the rim of the Instant Pot liner dry with a towel, and then place the liner in the Instant Pot.
    2. Add 8 cups of cold water, then place the chicken thighs on top, and half of the slivered ginger.
    3. Set the Instant Pot to high pressure for 20 minutes (porridge button), and let the Instant Pot naturally release completely (this takes about 30 minutes). If the float valve (“pin”) has not dropped, release the remaining pressure by turning the knob to the venting position. When the float valve has dropped, this means the Instant Pot has depressurized and it is safe to open.
    4. Wash and finely chop the green onions. This will be used to garnish the congee.
    5. Open the Instant Pot and remove the chicken thighs. Using tongs, discard the bones, and roughly shred the chicken. Bring the congee up to a boil using the saute mode, and add the shredded chicken to the congee. If the congee is too thick, stir in a cup of hot water to thin the congee. Then add the salt and white pepper to taste.
    6. Ladle the congee into serving bowls and garnish with the remaining slivered ginger and green onions.

    Just made your recipie. I did use less water as i like it more like porridge than soup. But it came out amazing. Never thought of using ginger. It is delicious. Thank you.

    Love congee, just had my own video on this, but a plain white congee! Instant pot is, imo, the most low maintenance way to cook congee!

    My Chinese ex-husband use to make this for me all the time and I really enjoyed it but never knew how he made it. All I knew was there was a pot of it ready on the stove. He often would use the carcass of our Thanksgiving turkey or a roasted chicken. Once it was ready, I would put some chili oil, sesame oil, white pepper and scallions on it and OH WOW I could eat it every day. We've been divorced for a couple years now but are still friends just living in different cities so not many chances for me to have his. He did make a batch of it for me for Christmas a couple years back but I haven't had it since. I just started my instant pot so fingers crossed mine tastes as good as his. Thanks for the simple directions. I didn't know what to search for when looking for a recipe because he always just called if juk. I have no clue how that word is supposed to be spelled so I just did it phonetically.

    That looks delicious. Thanks for posting such clear and easy to follow instructions.
    It looks like you may be using a 6 quart Instant Pot. I have found I can double most recipes when using my8 quart. How much longer should I cook it for?

      Thank you! Thank you for watching my video. I do try to make the steps clear so that people can follow along as they are making it at home. Yes I have a 6 Q IP. It’s good to double the recipe if you have a 8 Q IP if you love congee. It will just take longer to come up to high pressure, I might increase the time by 5-10 min and increase the natural release time by 15 min. But just experiment and see what gives the best results. I haven’t tried doubling the recipe before, but all the best to you. Have fun and happy eating!

      I have never tired making congee with short grain rice before. If you do, you might have to adjust the cooking time and water. It's worth trying! Let me know how it goes!
