Yes, the Instant Pot makes congee a breeze to make. You certainly don't have stand over the stove to make sure the pot doesn't boil over. Thank you for trying my recipe and for letting me know it was delicious! That makes me happy. Happy cooking!
That looks delicious. Thanks for posting such clear and easy to follow instructions. It looks like you may be using a 6 quart Instant Pot. I have found I can double most recipes when using my8 quart. How much longer should I cook it for? Thanks
Thank you! Thank you for watching my video. I do try to make the steps clear so that people can follow along as they are making it at home. Yes I have a 6 Q IP. It’s good to double the recipe if you have a 8 Q IP if you love congee. It will just take longer to come up to high pressure, I might increase the time by 5-10 min and increase the natural release time by 15 min. But just experiment and see what gives the best results. I haven’t tried doubling the recipe before, but all the best to you. Have fun and happy eating!
My Chinese ex-husband use to make this for me all the time and I really enjoyed it but never knew how he made it. All I knew was there was a pot of it ready on the stove. He often would use the carcass of our Thanksgiving turkey or a roasted chicken. Once it was ready, I would put some chili oil, sesame oil, white pepper and scallions on it and OH WOW I could eat it every day. We've been divorced for a couple years now but are still friends just living in different cities so not many chances for me to have his. He did make a batch of it for me for Christmas a couple years back but I haven't had it since. I just started my instant pot so fingers crossed mine tastes as good as his. Thanks for the simple directions. I didn't know what to search for when looking for a recipe because he always just called if juk. I have no clue how that word is supposed to be spelled so I just did it phonetically.

Love congee, just had my own video on this, but a plain white congee! Instant pot is, imo, the most low maintenance way to cook congee!
