Hey man, last year I was going through a really rough time with mental illness/drugs. I've seen some of your videos lately as I've been trying to get into cooking to be a more "responsible" adult with their **** together. You've helped me a lot through a difficult time period and helped me find a new passion in life even if I'm just beginning. Thank you John for being a shining light. You have a wonderful personality and wonderful recipes that are easy and fun to make.
Hey there, stopped to say congrats on building a healthy lifestyle. I live with mental illness too. We've got to talk about it... Normalize it in society. The holidays can be tough. I'm glad you are doing something for yourself learning a new hobby. I got into sugar cookies last year watching John's videos. Never give up friend. Best wishes on your 2024! 🙂
Good for you for choosing to change your life! I think finding something creative to do, such as cooking or baking etc., is a wonderful way to redirect your energy. I wish you much success on your journey to getting healthy!!! HAPPY HOLIDAYS❤
Speaking of nostalgia, I learned to make fudge this way in the 7th grade. I went home with a friend one day after school and his mother had the milk and chocolate ready. The chocolate was a big hunk of semisweet cut from a massive bar at the grocery store. We made a big pan together, under close supervision of course. After homework and a fat BLT sandwich, we got to sample it. I am 75 years old and still make this occasionally.
For Canadians with different measurements: (1) 225g bar of unsweetened (1) 225g bar of semisweet (2) 300g can of sweetened condensed milk This is the ratio I use and it turns out perfect, just make sure the unsweetened chocolate is chopped finely
I have made the fudge recipe for years. I used to be a school nurse in a high school and I would make this with my kiddos in special education. They would take it home as a gift for their families.
Super easy and delicious! I use semi-sweet mini chips, a dash of Espresso, a tiny dash of Cayenne... a teaspoon of good Vanilla Extract... but for the Sweetened condensed milk I use either the Dulce de Leche version OR (if you're near a Russian store) the Bandi Caramel Sweetened Condensed Milk. Adds a magnificent flavour... SO fast, SO easy, but people think you're a wizard!!!
I’ve made this fudge for years. I add a pinch of salt and a little vanilla to the basic fudge then make different variations. Heath toffee bits, almonds and mini marshmallows for rocky road, or, my personal favorite, melted caramel swirled with the chocolate as it is poured into the pan.
John, you will now be causing a major issue in my family life. I anticipate on top of my seasonal cheesecake, which is demanded by family and friends. Your fudge will now be included in my holiday workload. So, with that said, thank you and I truly hope you and yours enjoy the season😊
Hello John, your videos bring so much joy. I refer to you as “my friend” when i tell my husband anything related to baking or ur videos. I bought a hand mixer inspired by “my friend” and looking to buy more stuff… Thankyou so much ..
I Loved Watching you SUCH PASSION! ❤️ I Will Try This Fudge Recipe 😋 Definitely! & Watch You Again... For Something Eles Exciting! 😊 Thanks For Sharing With All Of Us!
Made the recipe linked below with the Ghirardelli and condensed milk. Came out really good everyone couldn't believe it was my first time making fudge. Great video and great recipe.
I've always made fudge this way, same ingredients as the quick fudge recipe from my old school better homes and gardens cookbook. It really is amazing!
This is a lovely recipe that I will make for Easter and send away for gifts. I've made chocolate truffles with similar ingredients and I put a little brandy to flavor it. Yum!
I've made this for years, though always with good semi-sweet chocolate chips. Two of the favorite flavor variants that my family loves the most are Amaretto and Baileys flavored fudge. Flavor heaven! Rum fudge is probably 3rd place. If you are going to use rum, best to use a dark rum such as Myers. Also I've always used a double-boiler to melt the chocolate with the sweetened condensed milk. Was always told the steamed water was a little bit better of a safety barrier than direct flame or electric burner.
Actually I was just going to be searching for this recipe. I have not made this in probably 10 years it is the easiest and best fudge ever. I have even made it with butterscotch chips or peanut butter chips. Absolutely foolproof.
Definitely watch your fingers when chopping chocolate! When my sister and I were in middle school, Mom told us to make some almond bark. Since this was in the ancient days of the 1970s, we only had a huge block of white chocolate and the double boiler, so we split up the block and both went to work, chopping side by side. Sis finished before me and reached out with her knife to help me finish. She sliced the tops of my index and middle fingers on my left hand. I still have those scars.
My partner makes fudge in the microwave. It doesn’t burn It has marshmallow fluff And he uses 1/3 cup of Splenda and 2/3 cup sugar and a couple types of chocolate It takes a shorter amount of time and the sugar dissolves and it’s very smooth He’ll make 2 dozen or so to give away at Christmas
My mum made hers with chocolate chips marshmallow fluff and black walnuts. Melt together mix well and refrigerate till firm. Chill til set. Creamy and luscious.
I made 2 ingredient fuge the other day and it turned out great. The chocolate i used was just great value semi-sweet chocolate chips. You teally dont need "The Best" chocolate in the world in order to make a delicious fudge.
I LOVE making this type of fudge during the holidays. It’s so simple and everyone loves it! I use a dark chocolate and add a little almond extract as my “secret ingredient”. I also really enjoy making a white peppermint fudge based around this same recipe. White chocolate, condensed milk, peppermint. It turns out amazing everytime
I just stumbled on your site and l am enjoying your manner of presentation. I have been making this fudge recipe adding vanilla and just barely a dash of salt, for over five and a half decades!! It is the only way l make it and it is passed on to my granddaughters who range from 11 to 26 in age. My great granddaughter is 4 y/o so too young yet to make it. But it will be the recipe she will be taught!😊 Just before l watched this clip, l watched your sugar cookie clip. I am making Christmas cookies this weekend with the young grands and plan to use your recipe. Thank you for sharing and your hard work!😊
I never knew making fudge could be so easy. I've seen it made using a double cream mixture that gets poured onto a marble table and folded quickly using a metal spatula over and over until cool. 😋
I make fudge this way but I melt the chocolate and sweetened condensed milk in the microwave. I keep a close eye on it and stir it every few seconds. Even easier and has always worked! Also, I melt peanutbutter with the mixture for a fantastic peanutbutter fudge!
I’ve also used white chocolate then add any flavours (or lollies) like peanut butter, caramels, we have lollies called red rippers which are nice melted into it
I'm not a fan of chocolate, but I love watching you. However, The Condensed milk when simmered for about 3 hours (replenish water as needed), then placed in the freezer overnight Makes an AMAZING vintage dessert. Slide out of can, slice thin, plate individually on top of sliced Pineapple rings, a dollop of whipped cream and a cherry. 🍒 Such a yummy dessert. ❤
Not a fan of chocolate? Never heard of such thing. I was always told especially as a little girl everybody in the world loves chocolate lol. But hey we all eat what we love.
I've been making this fudge recipe for years in a variety of flavors.... chocolate mint, s'mores with marshmallows mixed in and teddy grahams sprinkled on top, eggnog fudge (white chocolate fudge with nutmeg), mocha, chocolate peanut butter, Rocky Road with marshmallows and peanuts, chocolate chip cookie dough (white chocolate fudge mixed with eggless cookie dough)... the options are endless!
This was the first way I learned to make fudge, for my father who’s lactose intolerant I used cream of coconut. Not coconut cream. And he loves mound candies so that was perfect for him.
Have you ever tried brazilian brigadeiro? It's made with condensed milk (as 90% of the brazilian sweet recipies) and it's probably the most popular candy in Brazil. Extremely delicious.
I swear… Everytime I get a hankering to make something specific you post a video of that thing within a few days!! (Am I tuned into you or you me? 🤣) I love it! Your recipes/tutorials are the easiest for me to follow thank you!
if you like fudge, you should really try Brigadeiro from Brazil! it’s the same basic ingredients but the final results are different and kids LOVE IT, it is the most common candy of kids parties here ❤️🇧🇷
Hi John. Love your channel and only just discovered it so catching up on all your overwhelmingly delicious recipes. Also loved your visit to Paris. Those croissants, my word! I know you did say that there were many different ways of making fudge. Here (in South Africa), our fudge is made of butter, sugar, condensed milk and golden syrup. I've never seen chocolate in fudge before, But I'm sure yours is just as yummy.
Anxiousness awaiting the delivery of your most recent spiral bound cookbook. Thank you for your time and dedication. Love your family and the UA-cam videos. Best to you and yours in the New Year.
Even I can do this, and that's saying a lot! I put the burner on the lowest setting. Eventually it is one big gloppy mass -- that's when it's time to transfer to your 8x8 or whatever form you're using. Near the end I added 2 cups of finely chopped walnuts, 1 tbsp of brown sugar, and 5 finely chopped Ghirardelli white chocolate balls. Then once in the 8x8, and all smoothed, I sprinkled 1/ 2 cup of finely chopped walnuts on the top. Perfect texture and taste. 2 hours set up very well.
@@AdrienneCM10 yes I have that one! Beautiful cookbook. The recipes are all so fancy, though ☺️ I like the recipes that he posts on here! I would love to see a baking cookbook! 😊

Question….will this work with white chocolate? Side note: used your method of combining lemon peel with sugar into my biscotti recipe..GAME CHANGER. Love your content, brilliant!
You should try to make brigadeiros someday. It's basically this same fudge, but with a different chocolate:condensed milk ratio, wich gives it a much creamier texture. Traditionally, it's served in the form of small balls covered in sprinkles, but if you let it cook just long enough (not until it can retain its ball shape), it's also perfect to use as a frosting for cakes - especially for Brazilian carrot cake, which is very different from the American one.
I did some holiday treat making this year, for the first time really, and I have been using ghirdelli chocolate chips for almost everything. I looked at bars too and it seemed to be less economical for sure, I was wondering why and what you said could be a reason I suppose. I’ve had a fair amount of luck with the chips but now I’m curious to use bars.
I don't know. I know the masses enjoy this recipe so I'll agree it's a popular alternative to the real recipe. Hehe. Been making that Hershey's cocoa fudge my whole life and that's a long time. What you miss is the pleasure of the taste of butter, vanilla and the texture. It's like a crunchy version of grandma's chocolate pie.
Just made this fudge, John. It’s the best, AND you get a workout chopping the good chocolate 😅. I can see why one might opt for chocolate chips. Thanks for the recipe and tips. I like that you can make it less sweet. I added a bar of 100% Ghirardelli to my big hunk of semisweet. You’re the best and I love your book!
I make it the same way only I use a douboiler and sprinkle not a lot but some salt on top I use course kosher salt just enough that there is a few spects on each piece
