When I moved to SC many moons ago, a gal told me she could live on a vegetable plate. I thought this odd since she wasn't a vegetarian. Now, I can live on a vegetable plate!!!
Amen. In our family, butter is a vegetable as well. Also, at our family gatherings there's always about 6 kinds of beans: pinto beans with ham, navy beans with ham, lima beans, black eyed peas, slow cooked green beans with bacon grease and seasoning salt, green beans with sliced potatoes, baked beans and then a 5 bean salad with celery and mayo. Most of the beans are served over or next to a huge slice of sweet corn bread.
I like to bridge the gap between the two by starting with canned and adding stuff to "fancy it up", like chopped toasted pecans and/or orange zest or marmalade.
Squash casserole- definitely vegetable in all of it’s crusty, cheesy, ooey gooey goodness. Fried okra, corn pudding, and broccoli salad (with cheddar cheese and crumbled bacon) are some I didn’t hear mentioned. Here’s to HEALTHY appetites!!
Hash brown potato casserole (known in my family as Jesse’s Funeral Potatoes), sweet potatoes with pecans on top battling with the classic sweet taters with toasted mini marshmallows, purple hull peas with Aunt Mary’s chili sauce, Kentucky Wonder green beans, and Bradley tomatoes since my grandfather Johnson started growing pink tomatoes in the 1930’s.
Possibly the weirdest American food thing I’ve ever heard of is marshmallows on savoury dishes. Seems very strange. Wonder who came up with that combination. Putting a sweet with vegetables.
I’m reminded of the funeral hot dish served in Minnesota and nearby states. ( hot dish is the same as casserole ) It’s made with macaroni and ground beef and some other goodies. Vegetable? You be the judge.
I totally agree that both canned and homemade cranberry sauce must be offered to avoid conflict. I stand firmly in the canned cranberry camp, but as I've matured I have gained a tolerance for the homemade cranberry sauce camp...as long as canned is also served, of course.
Pineapple casserole!! Gotta include it. Canned pineapple with shredded cheddar and crumbled Ritz crackers, plus sugar, flour, salt, and butter. Then you bake it, and it gets gooey and caramelized, and the crackers turn into an almost crumble streusel kinda thing! It shouldn’t work, the cheese should be a weird addition, but it totally works. It’s amazing and deserves a spot on a happy veggie plate. Landon we need another voting bracket on sides.
When the line is long at the reunions I just go straight to the desert table and start there because we all now that you fix your plate planning for the desert table plate. They only laugh once now several cousins meet me at the desert table first.
For the Veggie Plate at Threadgill's in Austin, Tx, I used to get Yellow Squash Casserole, Broccoli and Rice Casserole, and Hoppin' John (black eyed peas mixture). That with a side of Corn Bread. Heaven!!!

Looked like a dang good vegetable plate to me! Love me a good veggie plate with everything that was there! Starches definitely count as a vegetable! 😂 But I can hear my momma now. Where's the meat? She always had to have meat of some sort on her plate. When I'd tell her I didn't, she was horrified like she'd seen a ghost! 😱

Just one additional rule: NO LIMA BEANS. Yech. Gross. Doesn't even improve it when you call them butter beans. 🤮 But baked beans! With brown sugar and worcestershire sauce! Divine. And cream corn and hominy. Mmmmm.

From Mississippi. So glad you mentioned congealed salad. I still make several different recipes of these on a regular basis. Good year round with anything. I make blueberry with sour cream/ cool whip/ pecan topping, sweet cherry, usually eaten with a dollop of mayo, strawberry/banana also with sour cream and cool whip topping, and apricot with a cooked custard and whipped cream topping. They all have crushed pineapple in the jello part which gives it body and tartness. I like something sweet to eat along with my meal and these are perfect. Also can be dessert.
I completely understand! A vegetable plate includes everything but meat and designated desserts(as in on the desert table). Sorry on the late comment ,but have been off social media for a bit and just catching up! Love your content..it makes me happy.
I'm from Indiana, and my plate would always be sliced tomatoes, cucumber and onions, deviled eggs, green onions, radishes, and bread & butter. Followed up with sliced melons!
Yep! I'm originally from Illinois, and if your summer plate didn't have cob corn, sliced tomatoes, and green beans from the garden you weren't livin'! We always had a drinking glass of water with green onions in them on the table, too!

Additional pats cost ten cents. if you want a meat and three, that means one of the vegetables is replaced by Salisbury steak or meat loaf (I don't recommend).
Yep! Stuffing goes into the bird, and there's only so much space in there; so dressing it is, which is made in its own baking pan. That way, we can make enough to go around, coz everybody wants some!
Well... I had to laugh. I had a very southern grandma and to her, yes this would probably be a vegetable plate. I may mention that she was diabetic and died way too young. 😢 I am also diabetic, cause crummy genes.. I would eat most of what's on this plate, except the Mac and cheese, lime beans cause they are a starch, and no dressing. But more or less, if in the south do as the southerners do... 😂

I do love a delicious pickled egg with a little salt on top. That and a nice handful of potato chips and some baked beans (are there baked beans on there?) Is all I would add to that masterpiece.

Excellent idea- leftovers! I love it! I discovered I could make a healthy meal this way at any barbecue joint without the red meats! How about Baked brussels sprouts with garlic and herbs?? Would this qualify??
So many thoughts….all my grandparents never understood if you weren’t eating the ‘meat’ on your plate. How times have changed My DIL would be horrified at the bacon bits bc the bacon flavor has already seeped down into all of it. Even saying just scrape it off doesn’t work And if you had given that plate to my dad he would’ve asked ok but now what’s for dinner???
I am looking for some form of tomato to go with the corn bread and fried corn.... ? Seems a glaring omission. Or, is that a more middle soutn necessity. You are missing out on the lycopene for your health.
It's barely time for good tomatoes here, so I imagine that's the reason for the omission. Had one fresh out of the garden for lunch today, and it was truly special.
We’d already eaten our tomatoes before we realized we needed to take a picture, but it was present and accounted for! Even made an appearance for a fresh BLT for dinner last night 😉❤️
I prefer a vegetable plate, such as the one you pictured. Could you just send me one exactly like yours! Have you tried boiled eggs with only hot sauce and bacon bits. No mayo..just hot sauce. They are wonderful also!

We use canned cranberry sauce too, and if we want to be fancy, we just smoosh the lines out of it.
