  • Here is the recipe on how to make appam. Also, we made a vegetable stew as a side dish.
    Today I have taken a dish and most of you people asked for this video. Most people asked for this Appam recipe We'll see the complete process of making appam from soaking to the final product. I'm making this with two stages. Appam is a better combination with vada curry, white kurma, and cauliflower chops. this is a perfect breakfast recipe.
    Here are the ingredients for making the Appam And Veg Stew
    Appam
    Raw rice - 1.5 cup
    Parboiled rice - 2.5 cup
    Urad dhal - 1 cup
    Fenugreek seeds - 1 tsp
    Stew
    Coconut oil - 3 tsp
    Coconut milk(1st stage)- 1 cup
    Coconut milk(2nd stage) - 1 cup
    Ginger - 1 piece
    Green chilli - 5 nos
    Cinnamon - 3 nos
    Cloves - 3 nos
    Salt - As per taste
    Carrot - 1 cup
    Beans - 1 cup
    Cauliflower - 1 cup
    Onion - 2 nos
    Curry leaves - 1 sprig

    In Kerala aappm recipe is different.They use only raw rice and yeast for grinding.

    Just made Appam batter today so we can make Appam tomorrow. Planned veg stew so this is perfect recipe chef! Your thayir sadam was a hit lunch in my family. Same with many of your other dishes. But we made batter with 1:1 ratio. 1 part raw rice to 1 part parboiled rice. Will try your ratio next time. This 1:1 gives soft appam for us.

      How was the appam? Did you get it tasty in the same way it is served in hotels?

      @@Aurora_Norway2000 The proportion 1:1 we use at home tastes like hotel. I made veg stew with Chef Venkatesh bhat recipe and it was most delicious. I looked at the video and have to say Chef Sunder's recipe has a problem. Look at the video closely. There are cracks on the surface of the Appam. You should get open pores not cracks. His proportions are wrong. 1:1 is always correct for Appam. I used cast iron Appam chatti.

    In Kerala they use raw rice, grated coconut , and boiled rice grind it and add salt and yeast to fermentation. In stew they add cashew nut paste also!

    chef, in kerala cooking, dhal is not added to the batter.Instead its fermented with yeast..
