Question! Is the bento something that's fine to cook the day before? (and do you save it in the fridge until the next morning) or is it something you have to make in the same morning of the day you plan to use it?
Wood ear is 100% not something we have in my area, but we have another wild growing mushroom called sulfur shelf mushroom (AKA chicken of the woods), would that be a good substitute? I've never had wood ear so I'm unsure about it's flavor, but sulfur shelf has a dense texture and meaty flavor.

Usually, this is sold in Kagosuima Ken and Fokouka. I dot know the name of thd recipe since it mah havr difrent name in evrery japan province. Thank you, Chef.. best regards.

Yes! You can make it the day before and can keep it for around 2 to 3 days in the fridge!
