    I made this recipe for dinner and I LOVED it even though I was missing some key ingredients like the ginger, mushrooms, and spring onions. I really appreciate that it wasn’t too salty and you were right about the chicken being so soft! Thank you so much!! 😊 I’ll be making this again

    January 6, 2025. Over the weekend, with many family members gathered afyer the New Year festival, i made the braised chicken with mushrooms in my largest braising pot. Intending to accommodate 14 people, but prepared for 20, including the unexpected, i worked with only chicken thighs and chicken legs. Of course, the braising ingredients were increased proportionately to the amount by weight of chicken. The reviews were superb! Everyone wanted your recipe! We started the New Year very satisfied! I can see the braised chicken as a very frequent dish from our kitchen. Thank you very much😊.

    Hi Roland, I am cooking this dish... the taste super delicious :) but then I think my dark sauce is sweet. Please advise do I need to put salt to reduce the sweetness? Thanks so much...

      Hi Gibson. I think you can try your sauces individually and see which one is too sweet then you can adjust accordingly or buy a different brand in the future. If it’s too sweet, the remedy is to balance with more salt. Not ideal but this is to save the dish now.

    Do you think this dish will turn out well if I use pressure cooker instead? I will reduce the cooking time. I find that pressure cooker makes the chicken more tender. Thank you chef ! :)

      Hi Bailey. Hmm yes and no cos pressure cooking may over the chicken because chicken is more delicate than other meat. No worries, with our method, your chicken will be tender too. Try it and let us know. Happy cooking!

    Hi Roland, can this be done in the pressure cooker?

      Yes can. You can cook them for about 15 mins in a pressure cooker and then let the steam escape. In terms of timing, you actually won’t be saving a lot though. Hope this helps.

    I just got done making this for the second time and I have to say this is my favorite dish EVER! I switched it up this time and used boneless skinless chicken thighs that I cut up, and then I added water chestnuts and bamboo shoots. Either way it is AMAZING! Thank you Chefs for the great recipe!! I'm looking forward to making your Beef with Ginger and Spring Onion Stir Fry next!! Excuse me while I dive into this bowl of deliciousness!

      Hihi. That’s a 3L claypot. I think the width is about 30cm. Height is around the length of half an adult palm size. Hope this helps.
