    Today's baking is a rich 'Gateau Au chocolat',
    The Gateau Au chocolat is a rich and soft cake with meringue.

    Gateau Au chocolat (15cm)
    Ingredients
    105g Dark chocolate
    50g Fresh cream
    50g Unsalted butter
    3 (55g) Egg yolk
    50g Sugar A
    3 (110g) Egg white
    50g Sugar B
    20g Cake flour
    30g Cocoa powder
    Powdered sugar

    1. Put dark chocolate into fresh cream.
    2. Microwave it for about 40-50 seconds to melt.
    3. Mix it slowly by whisk.
    4. When it is mixed completely, add unsalted butter of the room temperature and melt it.
    5. Separate the egg yolk from the egg white.
    Place the egg white in refrigerator to keep the cool status.
    6. Add sugar A into egg yolk and mix.
    7. Melt sugar slowly by placing it over the hot water in a bowl until 40℃.
    8. At 40℃, remove hot water in bowl.
    9. Whisk it at high speed until the egg yolk mixture becomes ivory and falls in ribbon shape when you lift it.
    10. Add a chocolate mixture into the egg yolk mixture and mix.
    11. Whisk the cold egg white at high speed adding the sugar into mixture in three times.
    12. Whisk it at low speed for 2 minutes to remove the air bubble.
    13. Mix the sieved cake flour and cocoa powder with the chocolate mixture.
    14. Mix 1/3 of the meringue.
    15. Add the remnant meringue and mix it by spatula lightly.
    16. Pour the batter into a pan.
    17. Hit down the pan to the floor 3-4 times to release the air.
    18. Bake it at 180℃ for 15 minutes and then at 160℃ for 15-20 minutes.
    Bake until it is come out thickly when you poke it with stick,
    When it is come out like liquid, it is baked less. And when it wasn't come out, it was baked more.
    19, After cooling down it in a pan completely, place it in refrigerator for 1 day. You could eat it more delicious.
