    Pan size:
    8in/20.5cm diameter springform pan
    Ingredients:
    180g bread flour - add more flour if needed (depending on mashed pumpkin hydration)
    160g very active sourdough starter
    135g microwaved (steamed) & mashed pumpkin - any orange pumpkin (I used sweet pumpkin/Kabocha squash)
    25g sugar
    8g powdered milk
    10-39g cold milk - depends on mashed pumpkin hydration
    15g egg
    2g salt
    20g unsalted butter

    Hi, looks good! I am going to try to make this. May I know roughly what is the room temperature when making the dough?

      Yay!
      Room temperature when I am making bread around 21-25c. If the room temperature is very high you can proof at room temperature instead of warm place. Also watch your dough instead of recommended proofing time. Some sourdough bread proofing time can take longer than recommended time. Even you are working on the same recipe.

    I dont have pumpkin. Do butternut squash work ? I also have sweet potato

      Hi Sara,
      Yes you can use mashed butternut squash or any orange pumpkin. If the dough is too sticky add a little more flour - cooked kabocha squash in microwave oven has not much moisture. Adding sweet potato is great as well. I purple sweet potato bread!

    So gram for gram, this recipe did not turn out well. There's too much wet ingredients for that small amount of flour

      This recipe dough is pretty sticky.
      Did you use pumpkin puree or microwaved & mashed pumpkin? It depends on the mashed pumpkin hydratation milk amount would be very. I would not recommend add pumpkin puree which has higher hydration. Microwaved and mashed Kabocha squash is pretty thick which I used. If you use pumpkin puree you can add more flour.

      Start with no milk add gradually if needed. The starter is 100% hydration so not much room for other liquid ingredients. Microwaved and mashed pumpkin is the best. Sweet pumpkin (Kabocha squash) has very nice color, flavor and texture works really well if it is available near you.
