@@giselsilva No the starter is not 100% hydration. I used sweet stiff starter. I mixed 75g starter, 75g bread flour, 25g water and 10g sugar before bedtime and let sit at room temperature overnight. It will be ready to use early next morning. I use stiff starter without sugar some of my recipes. I usually show how to prepared the starter/levain in the video. Yes add flour to sweet stiff starter mix along with sourdough starter, water and sugar. Mix this sweet stiff starter and let sit at room temperature overnight. Tne next day add all dough ingredients prepared sweet stiff starter, bread flour, whole wheat flour, milk, sugar, salt and olive oil. This Shokupan method prepare sweet stiff starter a day early and adding to dough help bread extra soft, fluffy and delicious. It’s a great daily sandwich bread! I hope you try the recipe! Yes you can make hamburger buns. You can make 6 medium hamburger buns. Bake in preheated oven at 400F/205C for 15-18 minutes until golden brown. I also made dinner rolls using shokupan method. I tried using whole wheat flour to make the sweet stiff levain.. the taste comes out quite sour. But texture wise it's soft and fluffy!
