Hi. I want to tell you, first, that you have been my favourite chef for over 20 years. I like you, your recipes, your teaching technique, all of it. Secondly, I have owed you an apology for about 25 years. You were in DC on my tour bus, and after telling the bus that you were my favourite chef, I addressed you by the wrong name. I absolutely meant it, but I’m a classic example of a left handed person who can’t remember names..we could be speaking at a party and I WILL forget your name within 30 seconds. it’s quite embarrassing.
So, thank you for your terrific show, and I’m so sorry I’m an idiot. (Maybe after 25 years I’m not so bad. No, I am).

I first season my seafood with salt, pepper and oregano. Then sear in olive oil, garlic and peperoncino then remove. Then I add more garlic and peperoncino and add the clams and mussels with white wine and cover till open. I remove and strain the broth and reserve. Then I add more olive oil, garlic and perponcino canned San Marzano tomatoes cook for ten minutes then add the seafood and broth, copped parsley and serve with crostini

Thank you for watching! To clean the clams, soak them for 20 minutes in cold water, and then brush them well under the running cold water.
