Nova Scotia Green Tomato Chow | Canning Recipe | How to make Green Tomato Chutney / Chow

  • Hi Neighbours, I grew up in Nova Scotia, Cape Breton Island, and we grew up eating this green tomato chow. I love it. I loved it especially with Sunday suppers / dinner along side some mashed potatoes and other veggies. I hope you enjoy the video and recipe. Below are the ingredients ect... Have a wonderful and blessed day.
    There are many different recipes for this. I love putting some brown sugar in mine
    Ingredients
    For the sugar below you can use all white or all brown. I like using half of each
    8 pounds whole green tomatoes chopped into bite sized peices
    2.5 pounds medium white onions sliced
    ¼ cup pickling salt
    2 cups white sugar
    1.5 cups brown sugar
    3 cups pickling vinegar or white vinegar
    1 cup white wine vinegar
    2 teaspoon pickling spice
    ½ teaspoon allspice
    ½ teaspoon cloves
    1 teaspoon turmeric
    ¼-1/2 teaspoon cinnamon
    INSTRUCTIONS
    Preparing & Salting The Vegetables
    Sort through all the green tomatoes. The tomatoes should be firm, green, with no black spots, signs of disease, or pests. Remove all leaves, stems, and flower nubs. Wash really well.
    Once the tomatoes are washed, cut the green tomatoes slice the tomatoes into thin slices or you can do bite size chunks if you like just try to keep them as uniform as possible.
    Once the tomatoes are sliced up, peel and slice the white onion. Cut the onion slices to be a little smaller than the tomato.
    Mix the sliced onions and chopped green tomatoes together in a large bowl or pot. Add the pickling salt, and mix well. Cover the pot/bowl and put in cool place for like 8-11 hours or so or over night
    Once the salted vegetables have sat overnight, pour off any resulting brine liquid from the pot/bowl and discard it. Drain well and rinse to prevent from being too salty. A large colander works well.
    In a separate small saucepan or bowl, mix your the vinegars and spices with the 3 cups of your sugar. Mix well until all the sugar has dissolved. This is your pickling liquid.
    Transfer the drained onion and tomato mixture to a large pot, add the pickling liquid to the pot, and bring to a simmer over high heat. Once the pot starts to simmer, reduce the heat to medium-low, and simmer the tomato chow for about 1.5 - 2 hours stirring occasionally . During the last half hour of cooking stir the pot more frequently to prevent any scorching on the bottom.
    Canning The Green Tomato Chow
    Info below here I found explains it well so I am using this info and method below for you all
    During the time that the green tomato chow is simmering on the stove, assemble, wash, and prepare all your canning equipment.
    This includes: washing all equipment, pots, and jars/lids in hot soapy water, heating the washed snap lids and rings for at least 10 minutes, boiling the washed glass jars for 10 minutes prior to filling (keep jars and lids in hot water until ready to fill), setting out a dishcloth and rack on which the processed jars can cool, ensuring you have all tongs, ladles, stir spoons, and funnels you plan on using properly washed and dried.
    Use your canning tongs to carefully remove a glass jar from the hot water (one at a time). Gently pour the water back into the pot, then fill the hot glass jar with the hot green tomato chow. Repeat this process until all glass jars are filled, leaving ½ inch of headspace at the top. Work carefully, yet quickly to prevent the tomato chow and jars from cooling too much.
    Once all the jars are filled, use a clean dampened cloth to wipe all the jar rims, removing any spilled chow, and leaving a clean surface for the flat lids to seal to. Place a snap lid on each filled jar, followed by the metal ring, making sure not to twist the ring on too tightly. Fingertip tight is plenty!
    Using the canning tongs, gently place the filled jars of green tomato chow back into the large pot of boiling water. Ensure there is at least 1 inch of water above the lids of the jars.
    Bring the canning pot to a roiling boil, and process the green tomato chow chow for 5 minutes at altitudes below 1000ft, 10 minutes for altitudes between 1000ft -6000ft, and 15 minutes for altitudes above 6000ft. Start the time only when the pot is at a rolling boil.
    Cooling and Storing
    Once the green tomato chow chow has been processed for the proper time as indicated above, turn off the pot of water and let the jars sit until the water has stopped boiling, about 5 minutes. Carefully remove the jars one at a time with your canning tongs, and place them on a dishtowel or rack to cool for 24 to 48 hours at room temperature. You should hear the lids pop as the jars begin to cool down, indicating an air-tight seal.

    Great video. You do not need to sterilize anything if you waterbath 10 minutes or more. This saves a lot of time and effort. This is great stuff!!!!!

    Thank you Jerri-ellen for the video and the recipe. I am from Ontario and grew up on PEI. My mother( God rest her soul) used to make that chow. When I saw your video I decided to try my hand at making it as we had lots of green tomatoes left over in the garden. I just finished canning them this morning. I sampled the leftovers and it tasted good. However, I do think it tasted a bit too vinegary. I didn't use wine vinegar, instead, I used all-white vinegar (3.5 cups) I am wondering if that made a difference. If it did I will remember next year to follow your recipe to the letter. Thank-you 👍👍👍

      Hi my fellow Canadian and maritime or miss placed lol. I am also in Ontario i grew up on Cape Breton Islas. Sorry about your Mom. We have family in P.E.I. I find the white vinegar a lot stronger than the red wine vinegar and since we need the asset for canning to keep it shelf stable I find that with this recipe using the red wine vinegar, much better substitute for the white vinegar and it does give it to a milder vinegary taste, so yeah, hopefully you will try again next year and I hope that you will still enjoy the fact that you made. I appreciate you so much for taking time out of your day to spend it here and try the recipe and I can’t thank you enough for that.       Hi Tory Omgsh this is my absolute favourite canning recipe. We grew up on the stuff. Definitely give it a try. Don’t use white vinegar though use the wine one I did because when people substitute and use white it’s not the same at all. So nice of you to be here thanks for that

      Chow is amazing good. First time I had it was when I was about 6 years old at my grandmother's place. It's great stuff! You can use it like a condiment same as you would relish, or you can put some on your plate and use it the same way we use cranberries with our turkey dinners. You won't be disappointed

      The recipe says 2.5 c pickling vinegar or white vinegar and it also say’s 1 cup Wine vinegar.
      You stated in comments to not use White Vinegar…..so 2.5c + 1 cup all White Wine vinegar?

      I was just outside halifax, and like you i moved to ontario. In wasaga beach now. I do MASSIVE outdoor gardening, and this year im planning on greatly expanding what i grow on my postage stamp yard. Each year i grow 3 or 4 tomato plants and get enough to use fresh as they grow plus preserve enough to last almost all through winter.
      This year im going to try my hand at broccoli, green onions, cucumbers, cauliflower (if i have enough planters to add that to the list of new additions), as well as my standard legumes, and maybe a couple things i forget now. I love growing bush beans, but cant always find the seeds for them, so im crossing my fingers this will be my lucky year.

      @@CookingWithNeighbors I was in Guelph for a short time about 15 years or so back. Liked it there. I'm thinking of moving further north if I move again, but I'm not in a rush.
      My yard us incredibly small. I mean small to the point that only 4 small cars could fit in the ground space I have. But I've been working on maximizing the use of the space both for growing for long term consumption, and still having space to relax comfortably. Once I get that figured out, I'll likely do a series to post on here to show people how it's possible for almost anyone to knock a chunk off their spending, and food is a massive monthly cost, and that cost only rises. The setup I currently have for growing my tomatoes and jalapenos is tiny, so small it could fit on pretty much any balcony, and eyeballing it, takes up less than 18 square feet. I designed and built the rack I use for growing those 2 items myself, and I'm thinking about building a new one that will accommodate for growing herbs on the same rack without using up any extra space. And son of a gun, as I'm writing this, I just thought of a way to add a way to grow things like strawberries on that rack as well. Maybe next year I'll build it (unless the 6 year old in my head won't let me wait that long).
      I'm renting right now, and all the electrical running through the property (I'm in a cottage court, so we all have our own cottages in my neighbourhood) is underground, so I wouldn't want to even think of digging the ground up, so everything I grow is above ground in planters. Here's the part that's most shocking where it comes to my vegetable gardening. My front yard is mostly shade, so while some things are shade loving, those things tend to be your leafy green varieties like lettuce and spinach, etc, and as far as I know atm (I'll be investigating further later on) are best fresh, so I grow everything besides my herbs in the space between my cottage and my neighbour's, which CAN'T be more than 120 square feet and I still have room to sit and relax comfortably with company with everything I'm currently planting back there, and will continue to have great use even with what I'm planning to add in this year.

      I think it will do good in the long run. Canning is getting popular here in the states with the cost of food. Plus we need to try new things sometimes. That’s why I decided to throw in decorating this week. I probably should have just done the cooking segment, oh well. I still think this video will do well over time.

      Thank you Salayna for watching and for making this comment. I updated just now the recipe to go with what I said in the video. I rather the way I did in the video. Both recipes use to be there one from original and the version that I do and my Mom and Mother in law did. Don’t know why it was deleted so now I have the version in the video there. I can’t thank you enough for asking because it was probably like this for the past month. Ugh.

      Hi Sonia wave. They are just picked early or is you have some that need to be picked before the frost that didn’t get to ripen. We grew up having this with our Sunday suppers.

    Is this recipe similar to Graves tomato chow? It was more on the sweet side and so delicious.

    Question - have you ever froze it? I don’t plan to can the entire batch and I’m curious if it’s flavour/texture after freezing if anyone knows? Thanks!

      Hi Sarah 👋 thank you for stopping by. Yes you can absolutely freeze however it does change the texture. They get softer and more mushier when thawed. Flavour changes a bit but it is still good if you like to freeze some. I hope this helps. Thanks again for visiting and for your question. 🤗

      Wonderful! Thank you so much! I made my first large batch today and it is amazing!! So good in fact that I’ve changed my mind and will can it for pantry storage/gifts instead. Thank you for the wonderful recipe and shared knowledge! We are in southern Ontario and had a large amount of tomatoes suffer late blight this year. This will now be our yearly go to for end of season green tomatoes or those needing to be harvested early like in our case. Thanks again! 🇨🇦

    Do not simmer
    for 1.5 hours the tomatoes and onions will be mush.

      Hi Thomas I was afraid of the same thing but they really weren’t my usual time I do is an hour but thought I would follow mother in-laws advise and it taste great but you don’t have to simmer that long if you do t like 🤗 thanks for visiting :)

      @@CookingWithNeighbors I think because I used green cherry tomatoes it made it worse, but the onion were mush as well.
