    About Pai:
    Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the UA-cam channel Pailin's Kitchen.
    Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
    After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via UA-cam videos, her cookbook, and cooking classes.     I would like to let you know that I love this seafood dip and won’t go without it whenever seafood or stir fried firm vegetables are on our home’s menu. I first heard of Nam Jim Sifud through Pailin’s Kitchen and it become an absolute must ever since.     This sauce is so yummy 😋 I will never use butter again on my seafood. I didn’t realize how heavy the butter made you feel until I tried this sauce.

      @@travelfoodielove Yes, Southeast Asian sayces for meat, seafood are the best. Gordon Ramsay has even mentioned Cambodian garlic chili sauce during his beef salad tutorial. He loves it too

    Great posts and the only recipes that work for me. Have had trouble with balance but your tip on "leading with sour" is a big help. Please include balance tips in your other posts

    WoW! This made my day, now I'm hooked , so. I started watching your channel a while back and then recently I started watching you're playlists and I have to say I've been watching them nonstop. U really are a great chef, between your use of different flavors and herbs from your country, to the one I'm familiar with to your loving and beautiful down to earth personality u showcase everytime for me this channel is a complete 10!     Awesome sauce! 😄Just discovered your show on UA-cam today and I very much enjoy it. Thank you for sharing! This sauce is a lot like Vietnamese dipping sauces adjusted here and there depending on what we are dipping. 😄. A super simple Vietnamese accompaniment to seafood is lime juice and a lot of black pepper and salt. A dinner of steamed fresh seafood with your sauce and the lime/pepper/salt combo would be my idea of heaven on earth. 😉

    The best sauce I ever had was on Kata beach in Phuket this past February. It was so delicious I wanted to buy the bottle from the vendor but he didn't have enough. I have tasted plenty of sauces in my time but that was the best. First taste and I said to my travel mate that this was the best sauce he will ever try in Thailand. After he dipped his shrimp into the sauce, he totally agreed. I am going to try yours for sure tomorrow. Btw .. love love your videos!!!!

    i made it just after watching this video. I cannot stand watching you tasting this sauce. This sauce is sooo good but it turned to be so spicy when I added four chillies. Need to put only one chilli for my tastebud.

    I made this dip today and I was really surprised at how great tasting it was! But I used a less spicy green chilli coz I can't handle the smaller red chillies

      Actually this sauce originated from Chanthaburi, Thailand called ‘Nam Prik Kleu’ a hundred years ago. Which inspired from the Vietnamese sauce because there were a lot of Vietnamese missionaries living in Chanthaburi at that time.

    i heard this dipping sauce from MARK WEINS...and i searched how to make it...then i saw yours...and tried to make it...and BOOOOM! fell in love with it...what a great alternative to what dipping sauce i used to make SOY, VINEGAR, GARLIC and SHALLOTS...love this dipping sauce...everytime i cook steamed seafood...or grilled..i tried this also to PLA MEUK PHAD KAI KEM...

    can you please teach me the thai bbq dipping sauce. This is comonly found outside bars in thailand where bbq vendors sell bbq chicken and sausages on sticks.....with this sauce and cucumber.

    Not much of a seafood person, which is a shame I know. But I had a ex girlfriend who made this to have with moo krop and I loved it, now I can’t have deep fried food without namjin seafood and now I know how to make it, thanks!

    I don't have cilantro but I'm going to use spring onions instead inc the green stems usually go to my compost bin but thought hey why not try it..just a quick idea but I slice up broccoli stems and deep fry them I used to boil them but this sauce might just go well..the fried stems look good as a garnish as well because of the sqaurish shape after trimming. I wish you well

    Saw this vid last week and about to try it out as I got the pounding thing/pounder and most of the ingredients. Gonna hunt for Thai peppers, gonna use serrano as its the only one available for now...just hope it won't kill me! :-)
    p.s. Sry bout my technical kitchen terms, quite sure it's not called a pounder...or is it?

    My partner and I use this sauce (the green version actually) to marinate pork loin and pressure cook it. It's pretty good.

      SHAHRIL NIZAM The dipping sauce is pretty potent so you don't need too much of it. Maybe just double will be okay.

    Is this the same sauce for cockles salad? I went to Bangkok with my friends years ago and we ordered this cockles salad which had lime and tomato but we're unsure what the other ingredients were. We asked the chef for the recipe but he wouldn't give us 😂
