The BEST “Korean Kimchi Fried Rice” at Home? Easy!

- Hey! Today I'm whipping up some kimchi bacon fried rice with instant rice. Cool tip - you don't actually need to microwave the rice first. Skipping that step keeps the rice from getting too sticky and mushy. It helps mellow out the salty bacon, plus it makes everything extra tasty and easy to pull together. Super simple and delicious!
INGREDIENTS
3 strips of bacon, chopped
1 cup of diced green onion (mainly white part)
2 cups fermented kimchi
3 tbsp oil
3 tbsp soy sauce
2 tbsp gochugaru (Korean chili powder)
2 servings of day old rice (or 2 uncooked instant rice)
3 eggs (optional)
¼ cup cheese (optional)
INSTRUCTIONS
1. Chop green onions and bacon into small pieces.
2. Use scissors to cut kimchi directly in a bowl to avoid stains.
3. In a pan, sauté green onions in oil until translucent, about 5 minutes.
4. Add bacon to the pan and cook until the fat renders.
5. Push the bacon and onions to one side of the pan. Pour soy sauce into the empty side and heat for 7-8 seconds.
6. Mix in the kimchi, then sprinkle gochugaru (Korean chili powder) and stir well.
7. Add rice to the pan (use instant rice directly if preferred) and mix thoroughly.
8. Pack the rice into a bowl, then invert it onto a new pan to form a rice dome.
9. Beat an egg and pour it around the rice in the pan. Sprinkle cheese over the top.
10. Cook until the egg sets and the cheese melts.
11. Enjoy :)
