Moroccan Chicken Vermicelli (Seffa Medfouna) Recipe - CookingWithAlia - Episode 205

    Ingredients:
    Chicken:
    2 pounds (1 kg) of chicken drumsticks
    1 pound (500 grams) onions (grated)
    1/4 cup finely chopped cilantro
    1/4 cup finely chopped parsley
    1 teaspoon ground ginger, 1/2 teaspoon salt, 1/4 teaspoon black pepper, 1/4 teaspoon ground turmeric, a pinch of saffron threads
    2 cinnamon sticks
    1 tablespoon olive oil
    1 tablespoon vegetable oil
    1/2 teaspoon smen (ghee / clarified butter)
    Water to cook the chicken.
    Dried Fruits: Blanched almonds, pitted dates, raisins, and walnuts
    Vermicelli:
    1 pound (500 grams) of Italian vermicelli (very fine pasta)
    Water + salt
    butter

    Wow, that recipe looks wonderful. I tried this once when I went to Rabat but my host mother made a very simple version without almonds or dates or meat. Thanks

    Hi alia. I steam the vermicelli 1 time and then let it cook in water for a couple minutes. It gives the same result as your vermicelli. It wil save you time. Thanks for this tutoriol. Greets from Holland

    you could boil it in water but it taste really different when it steamed. I would strongly recommend to steam it :-)

    tbarkallah 3lik Ms Alia Why don't you steam the vermecilli while the chicken is cooking so it absorbs that flavor it comes out really flavorful and also you win some time as well. Good luck

    no, by the 3rd time you'll realize that the vermicelli is cooked. just make sure you get the right type of pasta - it's vermicelli, very fine, cut into small pieces.

    Thanks for the response PrettyinPink, but I meant more like if a tagine can cook couscous with meat on top of it, or does the couscous have to be prepared separately outside of the tagine pot?

    you can just skip that part. Rose water is not a real substitute of orange blossom water. That part was optional for decoration. Just use the almonds as is :-)

    for 2 reasons: 1st it does not make my couscous pot turn brown (when you boil water on it and nothing else), 2nd nice flavor!

    I guessed it. I hate it when my pots turn kind of brownish when I boil nothing with water in them. What I do I add some salt or olive oil, or sometimes both.

    Alia, or anyone else Moroccan, are there Moroccan dishes prepared all in one inside a Tagine, like rice or couscous at the bottom and the meat on top all cooked in there.

      Wafaa Karkache meat is fine. it will take longer to cook.

    Vermicelli here is Angel Hair Durum Wheat Pasta.
    It has to be incredibly fine. Not your usual vermicelli labelled pasta.

    The recipe looks interesting for a European. It looks rather complicated to make to me, well lots of steps. I know and make such foods myself, but I wonder how the combination of sweet and salty is also. Looks very good, but defin. an acquired taste. In my East. Europe. cuisine we don't mix sweet with salty. I'd like to try to make it one time.

      ellamae You will love this, it's fantastic. My husband is from Morocco and my inlaws made this for me when I visited there. It was absolutely incredible! I was not sure about the sweet/salty combination either when it came to chicken/pasta. If you follow the recipe as it states, it's a perfect balance. You'll Love it! ***Love cooking with Alia*** She is my favorite and I've used many of her recipe's !!
