Can I just say that I appreciate what you do here on UA-cam!!? I mean, it is so evident that you put in so much thought into whatever you make for us; plus, you always go the extra mile to guide us through whatever you're explaining. You're a fantastic teacher, Joanie and a lovely person as well

You can scoop the ice cream place it on a sheet tray that has been in the freezer so it’s cold then place everything back into the freezer then when your ready take it and give it a quick flick with a blow torch that gives it a nice shine

I make ice cream, so this only applies to homemade ice cream, but thickening the milk with a roux or using some gelatin can stabilise the scoops enough to get an extra 2-5 minutes out of it. I've made a couple of batches with gelatin that are basically frozen mousse that have to be over halfway melted before they start loosing their scoop shape. (Actually frozen cheesecake filling/mousse would make a good, less plasticky, sub for shots where you don't need real ice cream.)

Yep! It's tethered to the Canon EOS Utility just like in the tethering video, but in video mode through the live view. Also, once you finish recording and close out of the live view for video, it automatically downloads the files to your computer from the camera. Definitely makes life easier

Great tip with the fake ice cream. I've seen one using mashed potato, it tend to look too firm. Never actually use it before but I already wondering what am I gonna do with colored mashed potato. Anyway, that frosting tip combined with your tip on condensation could really make it legit, thanks Joanie!!
Oh and one question, does the freeze spray safe for food? Really don't want to waste any ice cream after taking a good shot

Also, you can form a hole in the bottom of the ice cream then shove a sliver of dry ice into the hole. That way, the ice cream stays cold from the inside out.

Not in the USA! By law you MUST photograph the food that you are selling. Supporting food items *can* be substituted.
If you are selling pancakes, then you can use motor oil instead of syrup because it will not soak into the hero.
If you are selling corn flakes, then you can fill the bowl with white glue instead of milk otherwise the hero will get soggy.
