I totally second that....there's not enough healthy tasty slow cooker vegan recipes. Lots of vegan recipes are hands on and during the week there's no time to cook and a slow cooker works great. Thanks for your recipes and efforts.
Hey girl hey 👋🏾 I made the broccoli and cheese casserole and just came here to let you know that I finished the entire crockpot to myself in 3 days. With no shame, ate this for all 3 meals. Baby! Let me tell you. It was absolutely incredible!! Thank you . I added some things to the recipe to make it my own and wanted to share (: 1. I added potatoes to the casserole and not just the cheeze mix. I Skinned , Boiled them and added to the crockpot. 2. My broccoli was fresh, not frozen. 3. Instead of brown rice, I used quinoa 4. I added more seasonings to the cheeze sauce like garlic powder, onion powder , pepper & paprika (possibly more but can’t recall) 5. Once everything was added into the crockpot, I added the same additional seasonings. Those red pepper flakes you mentioned really makes a difference. This meal was hearty and bangingggggg!!!!! Thank you.

I tried the broccoli and rice dish tonight. Added garlic, mushrooms, and onions to add more flavor. I tested it toward the end and I could mostly taste the hot pepper flakes so I added yellow curry powder and finely chopped tomatoes to give it more flavor. I topped it all with a vegan parmesan mixture at the end. I’m kind of liking it. May do something different next time. The recipe is a good base.

I think on the weekend I am going to make a bunch of my own sauce and freeze it in two cup mason jars. That way I will always have it for nice recipes like this. I buy those giant bags of broccoli at Costco. Do you think two cups would do it? Or should I use more? Thanks and hugs and love to you! 💕💕🥰

Yeah I am very pick about the premade sauces I only have two I use everything else sucks haha especially when it is super overseasoned not a big fan. but homemade sauce would just make this even more delicious!!! this was around 5-6 cups of broccoli I would say. you could add as more as little as you like totally up to you!! It actually tastes like the sauce factory had 600 kilos of leftover stale basil and oregano and didn’t know what else to do with it, so the just tossed it into the vat of cheap tomatoes. And the guys doing the tossing, all dressed in white yelled “here you go, suckers. Cheers.”
i think the video is incredible! i would say one thing, for a video that is soy, gluten, nut and oil free, i would of used a natural syrup over a sugar, due to the damaging affects of sugar... i grew up in a multiultural, but mainly british-italian family, and i can promise that that switch will not compromise flavour, and to add that missing flavour of the olive oil, 1 mashed up green olive will cook into it like an anchovie but give that olive seasoning that all authentic sauces have. much love xx
Glad you enjoyed it! i just really did the soy nut and gluten to be allergy friendly because I get a lot of requests for that :) figured I would omit oil as well and if people wanted to ad it they easily could! Ah I am italian and I as much as I love maple syrup I don’t think I could put it in my pasta sauce but to each their own :) will try the olive trick!

dorqian awww I’m sorry haha. You can make these without a slow cooker! I have a recipe for stove top lentil bolognese on my channel as for the casserole you can cook the rice on the stove and then assemble everything in a casserole dish and bake it at like 400F for 15-20 mins :)
Is there an alternative to the tomato paste? I have terrible IBS and the acidity in tomato when it's cooked absolutely kills me and I'm bed ridden for days. Please help!! Just got my own apartment and trying to learn to cook other things!
Hmmm because this is a tomato based sauce it’s kind of hard to eliminate the tomato aspect. My best suggestion would be maybe a roasted red pepper sauce if that is something your stomach can handle I know that can be iffy for people too. If regular tomato sauce is okay you can use that

hi Stephanie, depending on size of your potato it could vary! i use a food scale for all my recipes so i may have just had a very large potato. this recipe is older so i can't quite remember now
Hi Rhonda. I’m so sorry to hear the lentils didn’t get soft. Did you cook it on high or low? I’m not entirely sure. I know it worked fine for me and for others. In the future (if you want to try again) maybe you can try soaking the lentils ahead of time or even cooking them part of the way on the stove. I cook lentils a lot on my slow cooker and never have a problem. Let me know if you cooked on low or high. I’m sorry!

@@PlantifullyBased ok now I can tell you what I did. I just wanted to taste it before reporting because I didn't do exactly what you did. I doubled the sauce, but I put in 1 bag of frozen broccoli and 1 bag of frozen cauliflower. I did not put in chili flakes like you did because only 2 of my kids like spicy food so I could just add to personal plates. Chili flakes certainly add that extra flavor. Otherwise, I think it just needs some added salt. It's a hit. Not all my kids tasted it yet because it took extra time to cook but so far, 3 of us really like it and I will be making it again. I might saute some onions to add on top for tonight's dinner. And yes, it really thickened up which i was worried about after the longer cooking time since after 5 hours it was still very liquidy.
Healthy fats are found in nuts, seeds, tahini, avocados and a whole bunch other places. If you don’t care about being oil free you can always add a bit of oil into these recipes but as long as you’re keeping variety in your meals you’re fine. I never said to not eat fats?
Add salt to taste... so that way you can do it to your preference 🤣🤣🤣🤣🤣 internet trolls. Also, yes if you use regular sodium broth and then add more salt you are adding more salt to the meal than you would with a low sodium vegetable broth and then adding more salt 🙄 no one is stopping you from loading up your dish with salt
I’m sorry, I think it’s important to be kind. But the truth of this recipe is it’s not that good. I try to spice it up. I try to be creative but stick to the recipe in man this is tasteless mush.

yes you can, I would just wait and put it in a bit after maybe an hour after cooking so it doesn't get super mushy

Are the lentils tender when they are done? Lentils don’t cook well in acidic environment but I guess the time forces them to break down??
They are completely cooked down and soft :)

I'd just like to add.... might want to check your tomato sauce ingredients before adding sugar. It might already have it and be sweet enough.

hi Stephanie, depending on size of your potato it could vary! i use a food scale for all my recipes so i may have just had a very large potato. this recipe is older so i can't quite remember now

Hi Rhonda. I’m so sorry to hear the lentils didn’t get soft. Did you cook it on high or low? I’m not entirely sure. I know it worked fine for me and for others. In the future (if you want to try again) maybe you can try soaking the lentils ahead of time or even cooking them part of the way on the stove. I cook lentils a lot on my slow cooker and never have a problem. Let me know if you cooked on low or high. I’m sorry!

@@PlantifullyBased ok now I can tell you what I did. I just wanted to taste it before reporting because I didn't do exactly what you did. I doubled the sauce, but I put in 1 bag of frozen broccoli and 1 bag of frozen cauliflower. I did not put in chili flakes like you did because only 2 of my kids like spicy food so I could just add to personal plates.
Chili flakes certainly add that extra flavor. Otherwise, I think it just needs some added salt. It's a hit. Not all my kids tasted it yet because it took extra time to cook but so far, 3 of us really like it and I will be making it again. I might saute some onions to add on top for tonight's dinner. And yes, it really thickened up which i was worried about after the longer cooking time since after 5 hours it was still very liquidy.

Nope I measured it out before with a scale and just put it in there so they would be easy to pour out and not spill everywhere 🙃

Healthy fats are found in nuts, seeds, tahini, avocados and a whole bunch other places. If you don’t care about being oil free you can always add a bit of oil into these recipes but as long as you’re keeping variety in your meals you’re fine. I never said to not eat fats?

Also, yes if you use regular sodium broth and then add more salt you are adding more salt to the meal than you would with a low sodium vegetable broth and then adding more salt 🙄 no one is stopping you from loading up your dish with salt

I’m sorry, I think it’s important to be kind. But the truth of this recipe is it’s not that good. I try to spice it up. I try to be creative but stick to the recipe in man this is tasteless mush.

It’s a slow cooker... you put it all in there and let the slow cooker do the work. It isn’t 4 hours of active cooking time lol. So yes it’s easy

Just made the Lentil Bolognese -- I added the uncooked pasta and some additional water in 45 minutes before it was done, and it all came together wonderfully as a one-pot meal! Thanks so much for the recipe! :)
