How to Make Christmas Cake (Strawberry Sponge Cake Recipe) | Cooking with Dog

  • This Japanese Christmas Cake is a fluffy sponge cake decorated with a generous amount of strawberries and whipped cream. Try this recipe at Christmas time. It's a real treat for the kids!

    * Time for cooling sponge cake is not included in cook time.
    - Sponge Cake -
    150g Eggs (5.3 oz)
    100g Granulated Sugar (3.5 oz)
    90g Cake Flour or Pastry Flour (3.2 oz)
    (Use Cake Flour if you can. Pastry flour is fine but Cake Flour is better for its lower protein content.)
    15g Unsalted Butter (0.53 oz)
    1 tbsp Milk
    - Soaking Syrup -
    2 tbsp Granulated Sugar
    3 tbsp Hot Water
    1 tbsp Kirsch - a type of brandy made from fermented cherries, optional
    - Toppings -
    400ml Whipping Cream with 35% fat (1.7 cups)
    3 tbsp Granulated Sugar
    450g Strawberries (1.0 oz)
    Powdered Sugar
    Parchment Paper (bottom): 18.4cm/7.2" diameter
    Parchment Paper (side): 6x58cm/2.4"x22.8"
    Cake Pan (18cm/7.1" diameter)
    Christmas Ornaments
    * 1 tablespoon (tbsp) = 15 ml, 1 teaspoon (tsp) = 5 ml
    RECIPE NOTES
    (This is one of the most difficult recipes we introduced, so please follow the instructions thoroughly.)
    * Measuring the baking ingredients by weight is absolutely necessary, so make sure to use a proper scale.
    * The measurements and whipping time for the batter are critical to making a sponge cake. If they are not accurate, the sponge cake will become flat.
    * Let the cake cool down in the cake pan as it will keep the sponge cake moist.
    * We recommend using the real whipping cream with no additives. It is rich-flavored and far more tastier than non-dairy alternatives.
    * The baking time depends on various factors, for example, the size of round pan and the type of oven you use. We recommend keeping your eyes on the cake while baking.
    * If the height of sponge cake is not enough, you might want to bake another sponge cake so that your Christmas cake will have 3 or 4 layers.

    6 colheres de sopade açúcar

    Açúcar de confeiteiro
    Papel vegetal (para o fundo): 18,4 cm
    Papel vegetal (para a lateral): 6 X 58cm
    Forma para o bolo: 18 cm de diâmetro

    I watched this tutorial many times when I was a teen cuz I was interested in the Japanese culture and I came across this channel. I was sad when Francis passed away :( but I always come back to this channel every now and then... It makes me feel happy and nostalgic, maybe this year I'll try to finally make this recipe :)

      Same. This channel taught me how to make Japanese curry when I was in college years ago. The dish became a staple comfort meal for me and now ex gf. Watching now just brings me back to those days when I was young dumb and in love. RIP Francis, thank you for the memories and the lessons.

    I made this cake but I also added canned peaches and I used the peach syrup instead of the brandy to moisten it. Seriously, it is totally worth it, very delicious, light cake. I always make it when I can get nice fresh strawberries.

    I made this as a birthday cake for my dad. It turned out wonderful!! A tip for those who do not have cake flour and only have all purpose: for each cup of flour, take away two Tbsp and replace them with cornstarch! Sift five times before using it in this recipe. :) Follow this recipe exactly and you can't go wrong! I did mess up on the first batter though, when I accidentally put in the butter and milk while beating the batter which resulted in a watery mixture that would not beat to soft peak. Beating to soft peak and not over mixing is definitely key to a good spongy cake!

      I measured the eggs, 3 of them weighed about 180g, shell and all, I assumed they were going to be the right weight once discarded the shell, it turned out well.

      +Yuki Sora In a pinch, you can substitute all purpose flour and cornstarch. For every cup of AFP, deduct 2 tbsp of AFP then add 2 tbsp of cornstarch. Sift together for good mixing. I found it while googling because the store I went to ran out of cake flour.

    I'm not lactose intolerant, but here's a tip for people who are-
    Chill a can of full fat coconut in your fridge overnight. In the morning, carefully open the can and scoop out the cream from the top. This can be whipped with a bit of powdered sugar to make a sweet whipped topping. Then you could either follow the recipe completely, or top the cake with flakes of toasted coconut for extra yum~

    For a larger cake pan, you can double the amount of the ingredients or make 2 batches of sponge cake and layer them on top of each other :)

      lol. i made it in a rectangular pan and doubled the recipe bc it was a very large like 13x9inch cake pan. I just used a wooden spoon bc I didn't have a spatula either (im assuming ur talking about the rubber one?) I just skipped the brandy and decorated it on a flat surface and it turned out fine! still wish i had the dog though :(

    I just came back to say I made this cake for christmas yesterday and it is FANTASTIC.
    Since I forgot my hand mixer and did not have a pan that tall, I mixed everything by hand and divided my cake layers into three different cake pans (6").
    Was definitely a work out, but do not hesitate to make this cake!!! It's so worth it.

    I made this cake and it turned out great! I made a bigger one with three layers and it was gone in 1.5 days. I put kit kat chocolates all around it for decoration :)

      meow91japan Yah it took me like 5 hours! Very time consuming but delicious and now I ordered 8 gel food colors to make a rainbow cake next which will be even more time consuming! the colors cost alot, even though it was from amazon :( 8 colors for $26 with tax and shipping...

      I've tried making this cake about 6 times trying to figure out why the sponge cake keeps deflating. I've tried it exactly as described in the video and I've varied the temp of the eggs volume of flour etc. I even omitted the parchment paper on the side of the pan but to no effect. Do you have any suggestions on how to keep the cake from deflating since you seem to have pulled it off?

      Maybe you didn't beat the eggs enough ? I tried this recipe but i failed and most of times when i make a cake with the whole eggs it doesn't rise and it's no even a cake, the inside is totally weird, this is why i like to seprate my eggs when i bake a cake

    Please use 3 tbsp sugar and whip for 4-5 minutes. Making the whipped cream is easiest if you use a large bowl on a low surface :)

    Dear Cook and Francis, thank you for the excellent care in describing ingredients and passages. I made this as my 30th birthday cake and everybody was very happy. Nobody believed the cake had no yeast! Instead of kirsch I put a sprinkle of rose water, since I dislike alcohol in cakes, it suited the strawberries and cream very well.

    No matter what the standard sponge cake recipe is, this is the best and, so far, the safest way to succeed in making a sponge cake without baking powder or yeast! Thanks! I also use the basic sponge cake, instead f the savoiardi biscuits, to make Tiramisù :)

    This is the second time I've made this cake. It's AMAZING!!!!!!! best sponge ever it is so light I had a hard time convincing my family it wasn't store brought. Only thing I did different was substitute the syrup for mango&lime purée syrup thingy which help cut through the cream.

    It wasn't for christmas but a bunch of classmates in grade 12 had birthdays in the first week of May. I baked 3 of these cakes and just shared. I love this recipe!!

    Just made the cake today! It turned out great and am so glad I tried this. I would probably use 3/4 of the suggested sugar amount for the cake next time though. Also found out that it's ok to mix the batter a bit less, and to not flip the cake over when it's cooling. Thanks for the great recipe and video :)

    Lovely cake! I cooked this in my fan oven 150 degrees centigrade for 19 minutes and it was just right. Used one part cornflour to 7 parts plain flour sifted 6 times instead of the 'cake flour' in the recipe as it's not available in the UK.

    I just followed the sponge cake recipe and succeeded! I have been trying with different recipes and got soggy cakes. But today my family and me could enjoy fluffy sponge cake! Arigato Gojaimas!!

    mmm, it was lovely. i accidently added the butter and milk before the flour so was worried i'd screwed up, but it was fine. it smelt like cooked eggs when it came out the oven so was worried it would taste like an omlette, but it didn't. it was fine. i over worry. so anyone else worried over why it smells like an omlette instead of a cake at first. don't worry.
    the kirsch syrup tasted nice. never used kirsch before.
    will definetly be making it again next year.

      beavertown2006 high Japanese metabolism. diet consists mainly of healthy food. plus we cook more than we go to restaurants. and we move around a lot.

    I made this cake the first time almost 10-12 years ago and my family loved it!
    Made four or five more for a charity benefit as part of a Chinese auction, to raise money for my Uncle’s medical bills. (He had lung cancer, but passed away from a heart attack in November 2011, but he loved the cake still.)
    I replaced the cherry brandy with maraschino cherry syrup and sugared water mixture for the soaking syrup, because a couple of us can’t have alcohol due to medications we’re taking, but the cake turned out delicious still.
    Making the cake again for the first time in almost 9-10 since I moved into my apartment for my Grandma’s birthday tomorrow!
