I am from South Korea, and I am pretty sure that this is NOT what we normally call Kimchi. It “looks” like a special Kimchi, called Nabak Kimchi. However, the recipe is different from normal Nabak Kimchi.
I have no reason whatsoever to doubt what you stated. However, like everything in North America, recipes are modified to suit American/Canadian tastes.
