Making Nattō (納豆) from Shogun Episode 4 "The Eightfold Fence"!

  • I actually finished recording this recipe a couple days before Shōgun Episode 4 "The Eightfold Fence" was released, but it seemed perfect timing to combine one of my regular recipes and the natto scene from episode 4 into a Babish-style video. Also allowed me to build my video editing skills (such as they are).
    This video shows the full process of how I make natto at home every couple months - from soaking to steaming to inoculating and fermenting to jarring and finally to eating my go-to recipe for week day breakfasts. I also cover tips on trying frozen and fresh natto, as well as tips for cleaning up and more!
    For those unfamiliar with natto, it is a traditional Japanese food that is fermented soybeans using a specific bacteria (Bacillus subtilis natto). It is supposedly has very beneficial health properties including "stronger bones to a healthier heart and immune system." (www.healthline.com/nutrition/...) While it is traditionally a very common breakfast food in Japan, it is somewhat notorious for its "powerful smell, strong flavor, and sticky, slimy texture."     I recorded this on my Pixel 7 with a bendy tripod mostly wedged into handles of our kitchen cabinet. I recorded it in multiple takes over a 3 days period and did some basic editing with kdenlive on Linux to merge it together and cut out some of my rambling.

      I was hoping to find a shibori workshop (one one for making udon in Shikoku) when we'll be visiting Japan in May, but haven't had luck so far. (partially for limited looking)
