Making a Bread Scoring Knife aka a Bread Lame

  • I was inspired to make this bread scoring knife from a chat I was having on Facebook. I'm not much of a baker but I have always had issues when it came to scoring bread before baking. While the wooden handle isn't quite necessary for the task it is nice to have. The key take away when scoring bread is that the blade used must be thin and razor sharp and I feel the thinness is really the key as thick blades will cause drag on the dough. Anyhow this was a fun build even with the two failures that taught me how important it is to have good reference surfaces when making these tight cuts. As you saw in the video I made two versions one with two screws and one with a single screw. I didn't think the single screw would provide enough pressure to hold the blade and I didn't think the thinner brass had enough meat to hold a screw thread. Fortunately I was wrong on both account and the single screw model worked out just fine. I realize this is a very niche build but I hope that some struggling baker will happen upon it and it will inspire them to make their own version. Thanks for watching.

    Excellent. I've done a lot of baking and have either used a single-sided razor blade or a crazy-sharp paring knife, but I've wanted one of these. You have inspired me!

    Very pretty, and might work with a single-edged blade. A double-edged blade is far too flexible to use with so little support.

      You would be wrong about it being too flexible. It works like a charm. But for gross scoring to delicate scoring art.

      Thanks but I can't remember the exact size. The threads measure about 4mm but I'm pretty sure I bought SAE and not metric threads.

    Love this , what are the screws called ? thumb screws ? what size would you suggest ??

      Thanks, the screws are called knurled thumb nuts. If you are in the U.S. I bought them at Lowes in their specialty hardware section which is the big drawers located in their hardware aisle.

    Would love to try make something like this. What are the rough dimensions of the handle? And what was the thickness of the thinner brass pieces?

      Overall its about 7-1/2 inches long and a 1/8 inch thick brass plate will work.

    Thank you! I was looking for lame making pictures, and I found this beauty! It's too professional for me :) - but with my dad I think we could do something useful: for my husbands birthday ;)
    But do you know the origin of this music? It's a wonderful Hungarian song, "A csitári hegyek alatt" - collected in 1914 and made famous by Zoltan Kodaly.

      It can be done with just hand tools but its a lot more time intensive.

      @@danthemakerman : i;m considering making it out of wood only (no brass or any other metal part, except by the screw) ... what do you think? is the brass piece a "must have"?

      @@otavioneto5971 I think you need the metal so the screw will have something to thread in to. It will probably work with wood alone but I think the thread might wear out and the screw may eventually stop tightening.
