I’m thinking the Mouse you caught and killed was a Scout and since he didn’t Return back to Base Command, the Other Mice figured he got caught and killed.🤔
On my greenhouses I would use a 12” piece of one “ diameter piece of pvc pipe and put a bag of just one bite mouse bait in the pvc pipe and the voles will eat there way through and eradicate them it works.
In fact, I've found it degrades certain cheap plastics. That's likely due to the penetrating ingredient. It's great at its intended job but a poor shop coolant or lube oil replacement.
I don't know the cost, but what about some type of mesh or metal with SMALL openings over trays to keep mice from nibbling seedlings.This way, the plants can breathe and be watered. Or just LONG meshes to cover several trays at a time .just a thought.

I’d love to find a used walk in freezer. I built my own cooler but freezers are a whole new ballgame.

That was a rather abrupt ending to the video: You forgot to remind us that "it ain't much, but it's honest work"!
Set the new/used freezer on good wooden pallets or plastic/graphic pallets, moisture to the bottom shouldnt be a problem.

This is NOT a coating, nor lube oil. It is a penetrating oil with the ability to dissolve rust.
In fact, I've found it degrades certain cheap plastics. That's likely due to the penetrating ingredient. It's great at its intended job but a poor shop coolant or lube oil replacement.
WD is a water dispersant nothing more
Spray on diesel fuel, let dry, wire brush off the rust and use rust oleum white paint, brand new freezer.
