I was trying to send you a picture of what we use to cut the roots but I can't figure out how to send it. We built a machine that holds the garlic in the center with the roots pointing one way and the stem pointing the other way. The garlic passes between 2 saw blades that cut the root and stem at one time, leaving the garlic bulb.
Their approach looks pretty efficient to me. There aren't any good ways to fully automate garlic - it's pretty hands-on. What would you recommend? And on the garlic size, it looks like a softneck silver skin to me which is a smaller garlic. Size looks about right, maybe on the smallish size but still marketable. They did say in the video that it was a rough year weather-wise and they were lucky to even have a harvest at all.
