    I made this your way. I usually use coconut milk but I was like screw it. This...came out better than my mothers. She was (and still is) mad. You can count the rice grains. And the color...was way on point. You sir are a undiscovered diamond. 5 stars

      I think he said he used coconut milk but he didn't show it. Maybe I'm mistaken. I'll watch it again.
      Watched it again. He used coconut cream. The box was on the counter with the ingredients. Your mom grew up at a time when we used to use coconut milk from scratch.

      Let me tell you brethren. My family put out great chefs my grands past and gone. Now my mother and auntie. My brother and father. My husband bad to. So I don’t have to taste you food. The steps just right. You well educated in Jamaican culinary art. One more think if you heart no right you can’t get that Midas touch in Jamaican cooking. It’s the heart that makes the finish touch pure gold. You have to feel the iris in you bone. Everybody want Jamaican food to box it like there own. Because anything Jamaican is a brand. But there is something in your brand that me from the country recognize that no one can imitate, the look of the art of cooking. You love it it’s all over you and that’s what make your food and channel different from all the rest. You got the real old time something. It’s in your bones.

    Finally learned how to make rice and my whole family love your recipe. Thank you so much! I thought jamaicans use coconut milk on their pea rice. Have made it five times now and will always cook rice with this method. Thank you for being so clear and simple with instructions.

    Looks good to me. I had some neighbors/friends from Trinidad and Tobago a few years ago. They taught me to make this, jerk chicken, and a couple of other things.
    I'll never go back.

      They make their food differently...every island tweaks their rice and peas that's y I don't say all Caribbean's food is the same BC it's not. Some Trini I know put sugar inna dem rice and chicken🤷🏾‍♀️

    We Black American cook the same thing but we called it red beans and rice. Not with the same type of seasonings but for the most part the same way. We sometimes add sausage in it to make it a whole meal with a side of corn bread.

    Di rice & peas deh look GOOOOOOOODDDDD!!!! You know, when it comes to the kitchen, sometimes yuh haffi tun yuh hand & mek fashion. You can put a piece of pigtail in the Rice & Peas, or even a piece of smoked turkey. It gives it a nice flavor.

      Judith Williams You would no doubt have learnt that you should take the pepper out before it bursts and make sure that it has no bursts before adding it to the pot.

      Janet Cousins My daughter did fass with it and burst it with a fork. Before she take it out she left it served her dinner which her rice was ok.

    FYI..... The reason your beans take so long to soften is due to the salt being added to early. If you add the salt b4 the beans is soft, I will keep the beans hard for a long time. Try adding the salt with the seasoning after the beans is soft, it will cut your cooking time in less than half the time.

    You are the only person to tell us to remove the scotch bonnet and time before it burst. I like your recipe. What kind of rice do you use. Parboil or long grain. Great job.

    Mmmm, I love rice & beans! I call it rice & peas only when I use pigeon peas, but in Creole, all peas/beans are named beans, but differentiated by red, black, pigeon, etc. Yeah, it's complicated 😂 lol. I can eat this by itself!!! Due to time restraints, I mostly make mine with canned beans & the process is different, but the end results are very similar. Of course, fresh cooked beans beat canned any day! Great job!

    Hi chef Morris. I love rice and peas and so do my whole family. But I can never master cooking this recipe because of the measurement of liquid. Can you please tell me exactly how much water to cook the peas and then add how much more, I do remember you mention that the liquid should be inch and a half above the rice. I normally use coconut milk but I like to use coconut cream too. I would love to master this recipe, by the way, I love watching all your recipe. Please more to come. Thank you very much for sharing how to cook all the yummy food.

    nice! ya do good with this - only thing I do differently is after soaking my red-beans ah doz pressure cook it for about 10 min. I also doh drain my rice completely, but leave ah little water to let it absorb in the grain before adding to the cooked peas. I does watch mi pot and add little, by little water as it cook to finish...Ya provided ah detailed blow by blow explanation too - like mi mama use ti say, "Every mikkle mek a mukkle" !

    If only I watched the whole video first..... I soaked my kidney beans overnight and was really excited to watch the rest of the video but wow, all in all it takes about 2 hours to cook RICE! I mean, wowzers. I do love Jamaican rice and peas, but TWO hours?!?!?! LOLOL! Im going to have to try this on a day when I have more patience hahahah

      My little time saver is to use my slow cooker for the peas/beans overnight. That way when im ready to cook my rice and peas the next day, my peas are already soft and ready to go

      You can also use canned beans. Not as rich but does the job.

    An Alternative softener of beans is adding lots of onions and cooking, in case there is no thyme.

    The water you soak the peas in over night do you discard & Refil with fresh water or OK to use as I was told it's bad for you toxins ECT?
