as a person who is actually experienced in pvp, what i can say about havel flip it's quite bad for pvp. Investing so much in endurance leave you with little stats for anything else, like hp, you further cut your hp by not using fap ring or motm, while Havel's armor provides a small amount of defense for its weight. On top of that getting your poise past 61 has little benefit in PvP, because of toggle escapes, while you almost never see poise more than 77 for motm+giants - a set up, that is primarily for defense, not poise
I'll add to this by dumping in my own unhealthy amount of time spent in Dark Souls PvP and say that endurance on more "meta" setups for PvP very rarely would be above 45-50 since all you gain after 40 is extra equip load and there are plenty of 32, 36, 56, or even 61 poise armor setups that aren't really challenging to fit under 25% of that equip load. Even on the rarer 77 poise setup of mask of the mother+giants you usually just accept a midroll and adjust your playstyle accordingly (midkumo is usually the most popular example). Havel's armor pieces do see some use though individually, since something like Mask of the Mother with Havel's body, Hollow soldier waistcloth and Eastern Gauntlets reaches 56 poise which is a pretty solid amount, typically 32 or 36 poise are the most common breakpoints used so 56 is on the heavier side. The hinting the video made at using pyromancy for offense to save equip load isn't entirely wrong, but you wouldn't necessarily be very successful with no stat investment. For PvP, pyromancy is much more reliant on having higher dexterity to speed up cast times if you want to be effective, to the point of having people who won't put 5 extra points into endurance for extra equip load be much more comfortable slipping 5 points into dex beyond the softcap to hit that 45 dex cast speed. At max cast speed things like great combustion have a lot more uses and it makes it a lot harder to just roll through and punish, or worse, just walk around and backstab, which you can quite comfortably do against low dex. Basically, full havels would be overkill for PvP on poise, and since its defenses are lower than fully upgraded giants, in any situation where you'd be flipping in full havels, you'd be better flipping in full giants. On top of that, Mask of the Mother is simply best in slot in PvP hands down, the extra HP is just outright better than the extra defense or really almost anything else (Crown of dusk will get a special mention here to amp up pyro damage, but you'd still probably default to MotM and swap over after you get hit below the MotM bonus). FaP ring is a more complicated point since ring slots can enable things besides just defense and poise like armor slots, but generally the extra HP and Stamina are pretty hard to outperform.

Havel flip was originally just someone fighting dishonest in pvp the old ds1 invaders remember, they were either hackers/twink builds or min maxed with havels chest and father mask with their ankles out. Excellent speedrun by the way, instant subscribe lol

I once spent my red titanite slab on a Chaos straight sword hilt +5, so I could have a meme weapon for my ninja flipping havel dad build. It did 74 damage on backstab for Firelink Hollows at 10 Humanity. I never brought the build out to pvp because I considered myself done after getting my screenshot. Now, in present day, I regret not having more recorded the build. I have a lost screenshot somewhere on my old laptop, as well as the save file. I really do wish I had taken it to pvp to see reactions.

3:11 damn, what is it with old games, and having game breaking glitches that involve the brightness bar? In another game I watch speedruns of, there Is a glitch called brightness boosting that launches your character in the air by just adjusting the brightness bar.
I've made a havel flip pvp build. Used silver and golden tracer as the weapons. Golden for damage output and silver for riposte and backstabbing damage. I can honestly say it was so stupid. Poise walking thru ugs for a backstab is so cheeky. The flipping is just extra bullshitery. The builds poise alone is enough. Being able to light roll or flip while also using golden tracer is a mean build. You can poise tank people's hits and stager them with r1.
