Living with a person hailing from the South (Alabama to be exact) taught me a lot of things about cooking and the Southern staples that go along with it. Since it is winter at the time of this recipe's creation, I am pulling out all the stops and giving you a stew loaded with Southern goodies such as a holy trinity (pepper, onion and celery), collard greens, black-eyed peas, pork sausage and, of course, ham broth thanks to Better Than Bouillon Ham Base (which eliminates the need for a ham hock). Welcome to what I call Southern Stew. It's like my Sausage & Spinach Soup, but Southernized!

I gotta try this. Everything I like. FYI, there is packaged bacon grease. Yes, there is such a thing, and it is the real stuff. Brand name is Bacon-up. Reasonable price. I find it in the grocery store.

Being from Mobile, I grew up with my Dad’s container of bacon grease. My arteries are still in recovery! But this inspired me to make a vegetarian healthier version. Really enjoying your videos,

I love cooking with you and definitely want to try this Better than bouillon. Now the problem is it’s not gluten free 😢 so we celiac people are left in the dark. Maybe if you talk and show them your sparkling eyes they will make one for us. PS my husband and I are making your pot roast for the third time and loving it. 🥰
I watched & waited with great anticipation. I just KNEW there had to be some Tony's Creole seasoning in there somewhere ha ha! This is absolutely delicious! Jeff, don't get those whack biscuits. If you want biscuits and don't want to take that much time, try the Red Lobster Biscuit mix or frozen version. Quick as the whack biscuits, but much tastier! Goes great with your Southern Stew! Love it! Love it! Love it! From a Bama girl. ❤❤❤

Their ham base is great! I know it’s not even close to traditional, but the first time I wanted to make the Alton Brown vichysoisse recipe, we had leftover ham broth on hand from a previous recipe. It turned out delicious and that’s how I’ve made it ever since.

I'd like to see this with ham vs sausage. Maybe a future idea. Cooked so ham has an almost brisket like texture.

Interesting Cajun dish. None of my Southern family uses exactly those spices or 'Trinity' veggies, but those are the basis of Cajun cooking.

Looks very interesting but I'm the type of person that needs to taste test before I would make it when there's things in there that I've never had such as collards and black-eyed peas. But looking at it, it looks good 👍
You can't go wrong with black-eyed peas and collards. Try it.
I use to be a salt, pepper, garlic person. We didn't do much seasoning when I was growing up. Mom's good always tasted great. Probably from all the extra onions. But since I've been watching this channel, I now have a cupboard full of spices, cooking wines and every better than boullion made.
All the more reason to try it out and see what you think of those two delicious things!

I think you should clean your instant pot regularly. I have found that Barkeeper's Friend does a great job on stainless.
I put mine in the dishwasher (on Cootie-Burn) Heaviest cycle and it comes out factory new! If not, some Lime-Away with a nylon scrubber. I use Cascade pods.
That's flavor crust don't mess with it.
Being clean and being polished are two very different things. If you’re polishing your liner you’re wasting your time. Just get all the schmutz off and clean with soap and water or throw it in the dishwasher is sufficient.
What if you have beans in a bag?
With all due respect , this is not a southern stew. This is a northener's perception of southern cooking. No one in my part of the south says "holy trinity" in reference to food, true southern cooking wd not include italian seasoning, and we wd not use this combination of ingredients in a stew. This is more like Cajun or Creole cooking? Try a pot of soup beans with a ham hock, maybe a side dish of greens. Or homemade biscuits & gravy.

I will say it's pretty obvious you don't come from the south besides the obvious accent. Italian seasoning isn't southern cooking and The Trinity is a New Orleans thing, in the South it really doesn't boil down to those three ingredients. Most people just use straight up onion.
I mean the collard greens and the the Black Eyed Peas works for a soul food reference, but you missed a chance to put a ham hock in there instead of bacon grease and breakfast sausage
A ham hack would add a ton of flavor!
