When I was in my twenties I worked in a small town butcher's shop. As a newbie I was put on making burgers and sausages. The use of a burger press, the wax paper discs and chilling before cooking is the real key to making proper burger patties and not having them crumble and break up when you cook them. Without those things you can never truly replicate fast food burgers in the home, you may think you can, but you can't.

Its not tho. The Onions are the simplest onion chutney you can make. The Buns are made in a factory, and just burned with a hot iron to give the impression they are selfmade. The Sauces, one of the most key ingredients in a good burger, seem to be factory made aswell. I think you just see more in it than there really is. Also the amount of sauce is utterly disgusting, you won't taste anything but that, 100% guaranteed. And roasting the buns was absolutely for nothing if they drench it in such an amount. And what "machines" do they use? A plastic mandolin, a normal spatula, a burger press that costs 65 bucks on Amazon (we use the same one). And sorry what... the flipping? They turn around the burger, how is that special, unique or perfect? Thats how you flip a burger... The enviroment tho is clean af, respect for that.

아내와 나는 햄버거를 정말 좋아해서 한국갈때마다 햄버거 맛집 찾아다니는데 지금까지 제일 맛있는 햄버거는 콜로라도주의 시골의 허름한 가게였는데 정말 인생최고의 햄버거였다. 라스베거스에서 먹은 고든램지보다 훨씬 맛있었고 거기못지않은 햄버거는 텍사스 겔베스턴에서 출발하는 크루즈에서 먹은 치즈버거도 환상의 맛이었다. 햄버거는 역시 미국이 최고다.
유튜브 보고 너무 먹고싶어서 몇주전에 대구에서 강릉으로 먹으러 갔어요 :) 2시쯤 갔는데 오전엔 예약이 다 찼다해서 브레이크타임까지 총 2시간 기다려서 먹었어요. 대구에는 수제버거 집이 많이 없어서 잘 모르겠지만 나름 맛있었어요. 가격은 좀 비쌌지만 막 완~~전 맛있다 정도는 아니고 그냥 맛있게 먹을만했어요. 평일이였는데도 사람이 너무 많았어요.

안타깝게도 각 동네마다 유동인구와 지역 특유의 소비성향에 따라서 12000원선의 버거 소비를 할 수 있느냐 없느냐에 따라 수제버거집의 생사가 갈립니다. 요즘은 중급 퀄리티로 5900원짜리 수제버거집도 생겨나고 있습니다. 물가가 비싸지는 것에 비해 소득이 크게 늘지 않는 것이 비수도권에 좋은 상점들이 들어가기 힘든 이유입니다. 첫 오픈 후 몇개월 간은 오픈빨이 좋은 비수도권 지역의 특성상 초반엔 잘 되다가 못 버티고 나가는 이유가 그 이유입니다. 사장님들이 예상했던 매출보다 적기때문이죠. 그리고 아직 우리나라사람들의 대다수에겐 한 끼의 만원이 넘는 비용을 투자하는 것이 일상화되어 있지 않습니다. 아직 갈길이 먼 대한민국입니다.

I use to work long hours in the restaurant industry, this strangely peaceful asmr for me. No crowd talking, just the music of the restaurant doing prep for the open.
I am so confused, did that many orders come in for those different types of burgers and are they all getting the same doneness on every meat patty? Do restaurants in Korea make burgers ahead of time?
This is how cooks should always be, great example gents. I imagine the first ingredient added to the ground meat was garlic but what was the second, the white ingredient? As an added bonus the chefs hand make their burgers from their own making. So many restaurants in the US use pre-ground and pre-shaped meat that comes frozen in a truck. The attention to detail and staying unique and one step ahead of their competitors is intriguing.
You are correct "look" amazing & I am sure they are flavourful but impossible to eat, its a BURGER, you need to be able to pick it up as a whole and take a bite. Oh, and yes, pineapple is an insult to the god or burgers.

This is how cooks should always be, great example gents. I imagine the first ingredient added to the ground meat was garlic but what was the second, the white ingredient? As an added bonus the chefs hand make their burgers from their own making. So many restaurants in the US use pre-ground and pre-shaped meat that comes frozen in a truck. The attention to detail and staying unique and one step ahead of their competitors is intriguing.

You are correct "look" amazing & I am sure they are flavourful but impossible to eat, its a BURGER, you need to be able to pick it up as a whole and take a bite. Oh, and yes, pineapple is an insult to the god or burgers.
