My son is going off to baseball, my daughter is doing homework, I have to run to the hardware store this evening, and I have laundry to fold. But because of this wonderful recipe I still have time to make a wholesome and utterly delicious dinner for my family. It literally took me 20 minutes. Honestly, I would never have tried lime pickle had I not seen it used this way! Please don’t bash Jamie for putting out simple recipes or using shortcuts! He’s trying to make things easy for busy families! Jamie has good taste, is a great chef and his heart is always in the right place. I am so appreciative, Jamie! I love your “fussier” recipes (I own your first, and many of your early cookbooks) and your simple ones too. There is just a certain time for each, and to each his own. :)
As a full time uni student i can't thank you enough for this book. Thanks Jamie.
Take note of the context for these quick recipes guys, they are aimed at the struggling family that doesn't have much money, are time pressed or aren't big on cooking, they are designed to get those people cooking healthy food as quickly as possible away from McDonalds or KFC. They aren't for the budding chef with a good income and lots of free time. Just chill. I think it's wonderful that he is planning on helping so many people who may otherwise find cooking too intimidating, time consuming or expensive to eat healthy.
Jey Forey People have a hard time seeing things from a different perspective, unfortunately. If they know how to make curry already they don't have to keep this in their memory banks. People that hardly ever cook might get inspired, though

I made this recipe last night with a few modifications - my store didn’t have the korma paste, so I used a half jar of patak’s jalfrezi simmer sauce instead, and I also added a tablespoon of ginger-garlic paste and a teaspoon of red chili powder, and it was absolutely fantastic. Probably the best dish I’ve ever made and the family loved it too. Y’all, please stop hating on Jamie just because of his use of Patak’s sauce - the video description does indicate that this is a paid ad by Patak’s, and the whole purpose of this video is to help those who need a quick meal and can’t afford to spend all day in the kitchen. There are many other videos out there if you want to make a fish curry from scratch, so stop hating and just watch those videos instead. I for one am very glad I came across this video cause I was able to have dinner ready in about 20 mins and it was fantastic. Thank you so much Jamie!
I dont think many people actually understand indian cooking. We use so many pre-prepared concotions. Garam masala, batter for different things like dosa, idli, vada, prepared papadums, etc. These things take bloody ages if you start from scratch every time. And these days when everyones so busy with jobs and kids it becomes very hard to even attempt this. The only thing that is actually worth discussing is the Korma paste but you can make that with mixing a couple of spices after searching the interwebs. No need to even make a paste, keep it dry and keep it.
I think this is a good way to cook curry for busy people. Especially if you don´t have an understanding of Indian spice combinations. I´m sure what Oliver has put together there tastes delicious even though we Indians may not identify it as a real curry.
@@oceaneyes7540 I'm of Indian descent and usually buy the spice packs to save time. It's an artform trying to get the combinations right if you're doing it from scratch. The spice packs provide a nice base, then I'll add my own flair such as extra cumin, cardamom, peppercorns, etc.
@@nahor88 yes indeed... But when one has time, nothing beats the fresh roasted, home ground mixture. Indian food is the art of slow cooking... We must try and preserve the traditional form of cooking it. Rather like the Japanese with their tea ceremony...
I'd buy anything of Patak's. Their family used to live down the road from my Mum and Mum used to play with the daughter. The advert from TV is true. They did actually start by selling herbs and spices from a shed in their garden.

The curry my dad taught me.
Stir Fry plenty of diced onion, garlic and ginger until they turn light golden brown. It takes about 30 mins .
Add indian curry power, garam masala powder, coconut milk, green pepper, fresh coriander, turmeric powder, potatos and meat/seafood.
Usually it takes around 1 hr 30 Mins to make.

DDMM DM lol 30 minutes? Try 5-10 mins just to get them translucent not light golden brown and even if you wanted them golden brown it doesnt take 30 mins also garam masala is for adding at the end of a curry not before.
chris hartley the onions need to be brown in order to get that deeper flavour out. French chefs use even longer time to get the deep brown onions needed for their French onion soup, it's supposd to add more depth to the taste of the curry.
Is there a benefit of adding masala at the end? Just like salt, I always add some masala at the beginning so that the meat can have some time to absorb some of its flavour, esp lamb. Then I may add more during tasting at the end.
So far, relatives and friends like this curry, I am not a professional chef, so it is enough to make everyone happy.
If you love a curry, don't use these jars. It is so easy to make yourself and so much better. Fry an onion, some garlic and fresh ginger, add spices to taste. Add the fish, fresh tomatoes (or from a can) and some coconut milk. Cook for a few minutes and your done. No expensive jars needed. Bit of fresh coriander on the top if you have.
yet an onion, garlic, ginger and spices will cost more than the jar. and some people don't have time to chop up all those ingredients. the jars are good but, I don't know why Jamie is using them. he is a chef for gods sake
Razor Wing Not sure what these jars cost in the UK, but when you buy the spices in larger packages and you use normal onions and garlic etc. I really doubt that would be more expensive than those jars. As for prep time, that comes down to a bit of practice. Shouldn't take you more than a minute (maybe two) for the amount he cooks here.
OK if you want to use it, but don't pretend that you are cooking.
SC exactly this sometime I learnt when I was investigating sugar! Jars are terrible for added sugar ! A blender some spice n tomatoes will do much better and healthier job
I'm with you, but there's a lot of people that are going to make this once and don't want a lot of leftover things they won't use because they aren't cooks. If he's getting people to cook at home with the prepared stuff it's a step in the right direction. Maybe they'll see how nice it is and make something from scratch later on.

I have the book, made well over half the recipes in it so far and never been disappointed. We have even had dinner parties of friends and served recipes from the book and had nothing but compliments. Ooops, sounding like an ad for the book, but seriously, it save a lot of time and is so easy!

Important note: when you're using pickles in a dish, note that pickle flavour can vary WILDLY between brands and even between batches. It's probably better to just put together the taste you want from spices and lime juice etc, for a more consistent, reliable, less risky result.

To be fair they were never anti establishment, so they have nothing to sell ou., Though Jamie's campaigns for healthy eating would seem at crossed purposes to marketing pataks. For me putting this recipe in his book takes the biscuit.

I make my own curry pastes and freeze them as ice cubes along with coconut milk ice cubes,perfect for a weeknight curry....besty of both worlds really

Tasty and healthy Fish can easily be made with fresh ingredients
Frozen chopped onions + frozen ginger & garlic cubes + chopped tomatoes in carton + oil. Add mustard seeds, chili powder, turmeric powder, Garam masala, salt and curry leaves. Cook to paste add coconut milk + add fish. No chopping required minimum prep time takes 15 mins using a few frozen fresh ingredients to speed up the process.
Monsoon fyi garam masala is for adding at the end of a curry not before.
chris hartley - No mate you can add it before as well as after but yeah if you do add it before it has to be used in balance with all the other spices. Too much and it's overpowering.
Monsoon well yes of course you can add it before, you can do what you like but with my experience from around India northern and southern its usual added afterwards.
chris hartley - Well I'm from the Indian sub continent so not necessarily. There are lots of recipes on you tube from India and Pakistan where they use it during and after cooking but anyways you go with your experience and I'll follow my roots 😁

Hi Ingrid - yes the korma paste used here is a substitute for a curry paste.

I didn't find lemon pickles so I used mango pickles instead. It's nice

If you have a lot of time and skill than what he's shown then yeah! Go for it! He did say this is an EASY and QUICK recipe for people who don't have time, or simply for people who don't cook but want real meals all the same.

u forgot onions, curry leaves, turmeric, cumin powder coriander powder, mustard seeds, green chillis, chilli paste and red chilli powder (or cayenne pepper if you can’t find red chilli powder)
Secondly, lime pickle is a condiment don’t put in the fish curry.
Make the gravy first and then add the fish.
