My recipe for the best encebollado: • Encebollado Ecuatoriano
INGREDIENTS:
1 lb white fish fillet (such as cod)
1 lb yuca (cassava)
1 cup milk
1 ají pepper
1 handful of cilantro
1 red onion
Salt to taste
Sides:
Chifles (plantain chips)
Lime
RECIPE:
First, peel and cut the yuca into medium-sized pieces and cook it until tender. Next, cut the fish into small cubes. Rinse it with salt to remove the strong seafood flavor. Repeat this process twice to ensure it’s clean. In a pot, boil water and add it to the fish-twice. The first time, drain it; the second time, let it partially cook. Mix it with blended yuca and milk to achieve the characteristic white color. Chop ají and add it to the ceviche. Finally, serve with onion, cilantro, and plantain chips.
