This is exactly my symptoms too minus i have not done any sensor bypassing. Would you say your final verdict on the initial issues was due to poor sensor cables?
I bought the 560 right before the 4th of July 2022...I would never recommend this grill ...not to my worse enemy...the wiring is pure shite..looks like it would go with a toy remote car you would by for your 6 year old..i have tried to grill around 7 0r 8 times in the last 17 months, I know..not very often. the reason is the fan has gave me holy hell...tried all the YT fixes and still crap..Don,t buy this grill.get the pellet grill..way better.

I'm guessing that it was just a bad connection at the switch. I haven't had any issues since disconnecting them.
@@dstadt71 did you ever end up bypassing the main lid switch or just the two? Do you have lid detection turned off on the fireboard?
@@sp-bbqking I have all of the switches bypassed now and have lud detection turned off on the FB.

Once you bypass the switches and switch to a Fireboard controller it's great. That's the only way I'd recommend it.
