Ok you're missing one very common ingredient; brown sugar. My grandfather would describe this thusly: the cook began his morning making HIS coffee, and would put two pans up and a Dutch oven on the fire. He'd get biscuits into the Dutch oven as the ham was frying, and you wanted some of that rendered ham fat to be in the pan. Once the ham was done he'd add the last of HIS coffee which by then was pretty strong, so he'd cut the bitterness with a touch of brown sugar. That's how my grandmother made it, how I make it, and how my boys insist on it.

My grandfather has made this for me all my life, it's crazy how good this stuff is. We normally cook up bacon and breakfast sausage and use the grease and such from that to make the gravy. Then we make some fluffy biscuits and dip them in it! It's a go-to breakfast in my house.

I tried to make some this morning by memory, only made it once before. Idk why I thought I had to make a rouxe. I added salt, pepper, msg, and a little garlic powder to mine. Flavor was still awesome. But i'm trying it this way next time so Ill know how its supposed to be.

Looks delicious! My grandmother used to make this. However; she would put the gravy in a small white bowl and it would somewhat separate, with the dark coffee toward the middle of the bowl. This created a dark center and a lighter more clear red/brown colored liquid around it. She told me, that's where it got it's name, "Red Eye". Nice video! Thank you. With Easter coming up... this may be on the table!
