Hello from Savannah, GA! Tomato gravy is one of my absolute favorites! My Mom and Dad grew up eating it, so I did as well! I've been making it for years, but I am alone in my love of tomatoes in any form, so I have to make a small batch.
So interesting that is what Tomato Gravy is! I often wondered? That is the basis for my Mother-in-law’s Swiss Steak recipe! My husband’s Birthday Dinner!🥰 We flour, Salt & Pepper and brown with a little Crisco, in a Dutch Oven with a lid, a lean Round Steak cut in Medallions then add to your Tomato Gravy. We then cover with lid and cook slowly on stove top or 325 oven until meat is fork tender! Sometimes I would have to add a little water if gravy was too thick and meat not tender enough yet! We always served over Mashed Potatoes…. I wonder if I served just the Tomato Gravy over a biscuit if my husband would wonder where the Round Steak was??? 😂 Thanks for clarifying what Southern Tomato Gravy is……
For long cook times and high heat, yes you should avoid it as the acids will strip the finish. For shorter cooks like this(10 min) it won’t hurt a thing!
