  • Boiled lobster: both cooking 4 lobsters and taking the lobster meat out of the shell: tail, claws, body.
    Place the lobsters in a large pot of unsalted boiling water for 10 minutes. Make sure the water just covers the lobsters. These lobsters are 1lb to 1 1/4 lb, so the cooking time is for that lobster size. I have also found this cooking time works fine for up to 1 1/2 lb lobsters. So long as you have the lobsters just covered and the water on a rolling boil in a large pot, they should be fine. Remember, that when you take them out of the pot and sit them on a plate, they will keep on cooking as they cool down. The meat should be white when cooked. If it is translucent, it needs more cooking. Once they have cooled down, remove the meat from the tail, claws and body as shown. Especially easy is removing the meat from the tail section with a fork. You don't need to dip the meat in butter. In my view, that simply ruins the gorgeous fresh taste. New England lobsters. Amazing. If you keep the shells after extracting the meat, you can use them and the cooking water as a base to make a terrific lobster bisque. That video is coming shortly.
