@@LachskoenigIVthey are more appealing to pests like caterpillars or aphids than the pumpkin plants, so you plant them as a distraction, kind of. Since the pumpkin needs lots of energy to grow, and the energy is produced by the leaves, caterpillars eating the leaves can cause problems
Even if it was edible it probably wouldn't taste good. Those things are tasty when small/young. If you let it overgrow it is good for seeds and for breaking records, not really for consumption. I wouldn't bother about it though, next to 120 billion pounds of food wasted in the US every year it is nothing.
The seeds can be sold to other collectors, there is a prize for the biggest pumpkin at many competitions , the bragging rights, and finally, the sheer joy of growing one of these beauties.
