May I ask how you prepare the endive? I have trouble finding it in the states, and also wonder how you prepare it. I see it is in addition to a salad, usually.
Hello. we have lots of recipes with endives in France with cheese, beets, ham, etc. For my part, I eat them raw in salads with vinaigrette or braised in a pan in butter or even baked in the oven with olive oil. I like everything! Have a nice evening

I would like to you a question. You show us three meals, it means that you don't have some snacks i between your meals? And second question, I noticed that you rarely eat carbohydrates. Is it common in France?
Hello. I rarely eat between meals. When I do I eat cheese. And yes I eat pretty low carb (around 80gr a day), I think French women have more around 100 to 150 gr a day. Have a nice day

We don't have all the same needs. Maybe your needs are higher than mine as I'm pretty short (1m60). But to control portions the key is to control the blood sugar by avoiding high glycemic index foods and increasing the amount of proteins. Proteins helps to reduce the speed of the absorption of carbs in the bloodstream, they are satiating and in addition they are crucial to maintain the lean mass (muscles) and a good metabolism. It’s practically no nutrition in lettuce. Whereas rocket ( arugula) is full of them along with watercress.
Very heavy on meat. Especially red meat. I only eat a small portion of red meat 2x a week.
