I love Spontini's pizza. Even if I'll admit that now is not as good as it used to be many years ago. The best one is made in the original shop in Via Spontini, in Milan, where it is cooked in a wood oven. Originally there was only one kind of Pizza made with only tomato, mozzarella and anchovies. Some years ago they started adding toppings on it. It's the best pizza of this kind I have ever had in Milano.

And all that I am saying is that this pizza is completely okay and delicious, its just one another way to make it, not to mention this style was developed in Italy (Milan to be specific). This is fork and knife pizza and that's why the crust is so fluffy. In my local area we also have a fluffy crust but it has a lot of air bubbles because it is still expected to be eaten by hand so it has to be light.

I was born in the neighborhoods of Spontini, just for curiosity the old school one (and only item in the menu) was with anchovies mixed in the tomato sauce, they remove it from the original recipe to enlarge their audience, another classic “feature” was the queue out of the restaurant and the timer of 3/4 minutes you had to consume your pizza before the waiters kicked you off your seat XD of course they did non cut with that mechanical machine but there was a sort of ninja 🥷 boy cutting at lighting speed

All the while watching this I kept saying "well, that can't be right", and sure enough, as soon as the video is finished I see Italians crying in the comments! 🤣
It destroys the gluten fibers. When gluten is stretched by hand it gets very thin and uniform so that when it cooks it gives the dough a great soft non-springy texture. Conversely, using a roller can snap the fibers making them contract which when baked gives dough an unpleasant chewy texture. For example, Little Caesar's. We used to roll the heck out of that dough and it's why the crust had a terrible texture. They have a new dough out now that's not as chewy so I don't know what they're doing differently because I don't work there anymore. It looks very uniform so it might be premade which is what most other chain pizza places use. I never did understand why LC's went to such lengths to have fresh dough daily if they're just going to ruin it with those rolling machines.

This isn't a real Italian pizza recipe. There isn't the yeast in the dough. There isn't any crust, we love crust, it's a fondamental piece of pizza. The tomato sauce is "okay". Also the tipe of cheese is okay, but you cannot cover the total pizza with that.

To tell the truth, if you go to the original location in Milan it works something like this: you queue to enter, as soon as you enter you sit down and within seconds they ask you what pizza you want, after 1 minute they bring it to you, after a maximum of 10 minutes (usually less) or you've eaten and you go out or they make you understand that there are people waiting and therefore you have to leave. This is during peak times obviously.

This isn't a real Italian pizza recipe. There isn't the yeast in the dough. There isn't any crust, we love crust, it's a fondamental piece of pizza. The tomato sauce is "okay". Also the tipe of cheese is okay, but you cannot cover the total pizza with that.

I figure rinsing the tomatoes gets rid of the seeds which I actually appreciate since I’m not a huge tomato’s fan, still looks very yummy!
Lol ikr? What the hell is up with people getting mad at that? I don't like the seeds and always get rid of them ... not by washing them but I still get rid of them. My doctor even recommended for me to get rid of them because they weren't very good for my health.

To tell the truth, if you go to the original location in Milan it works something like this: you queue to enter, as soon as you enter you sit down and within seconds they ask you what pizza you want, after 1 minute they bring it to you, after a maximum of 10 minutes (usually less) or you've eaten and you go out or they make you understand that there are people waiting and therefore you have to leave. This is during peak times obviously.
