You can see how strongly Dooku deviates from Sith doctrine. He fears Skywalker being stronger than Sidious, but that would make him a perfect apprentice for Dooku per the Rule of Two. He focuses on chivalry and humanocentrism, when real Sith only care about power, pragmatism and the exaltation of the self. He speaks to his master in a deferrential way, backing off placatingly rather than presenting well reasoned points respectfully. He is no longer a Jedi, but he will never be a Sith, despite his skill, the philosophical foundations of his character are incomparable with the lessons of Bane and Plagueis.
Later on in the book Dooku understands what Sidious meant regarding Anakin’s arm. But by that time, he’s already lost both hands. Every word uttered by Sidious is so captivating and yet terrifying.

General Grievous even says he was 'trained in your Jedi arts by Count Dooku'. The part where he still thinks of himself as 'Count Dooku' rather than using his Sith name adds to this, too.
Even though Dooku had fallen to the Dark Side, he still cared about others. Especially Qui-Gon. Which was one of the reasons why Dooku left the order. “If one more Jedi dies because of indolence on the part of the Republic and moral equivocation on the part of the Council, I will leave the Temple and refuse to look back.” ―Count Dooku
Dooku was never a "true" Sith. He saw himself as a neccessary evil, brutal methods to overcome brutal corruption. Interestingly, Palpatine never considered him one either, even compared to Maul.
Yeah Dooku had morals and dignity even after having left the Jedi order and joined the Sith. Sadly he was manipulated by the Sith and ultimately betrayed. He still held Qui Gon and obi wan in high esteem but probably thought Anakin was a pretentious upstart

I gotta say, in the Legends universe, Dooku's portrayal as been rather contradictory and confusing. On the one hand, he left the Jedi because he felt they had fallen from the true path and followed Palpatine because he thought it would tear down the corrupt republic and replace it with something better; and even then he still felt some attachment to his former colleagues, to the point where Yoda almost succeeded in turning him back to the light. On the other hand though, he was also portrayed as being even a little bit selfish when he was an apprentice, praises the power of the dark side, and seems to revel in the cruel actions he commits. He just seemed a little inconsistent between pieces of media is all I'm saying.
In a way i could see both of there points Anakin having thr higher potential as well as being the superior pilot and creativr fighter while Obi Wan is less rage filled and able to follow orders better yeah.
How ironic that Duku is disgusted by human flesh blend with mechanical droid cybernetics Anakin literally just did that within 10 minutes later to Dooku, cutting off both his hands.
