Lori, I know this is long after you posted this, so you may have heard this already. When we moved to Newark (NE Ark) about 25 years ago, I couldn't believe the amount of people who talked about their methods and recipes for making tamales. I was raised in the panhandle of Texas around a lot of native Mexicans so I was very familiar with tamales. But Arkansas? yes! Turns out that in Newport, there was a very successful restaurant that specialized in tamales, and they were good! It was "Lackeys". Mrs. Lackey was the inventor of the family recipe and you saw their tamales in all the local grocery stores. Newport is not too far from you, so I'm kind of surprised you hadn't heard of that local brand of tamales. When my girls were little, I read a book from the library to them about a family making dozens (hundreds?) of tamales for Christmas and one of the mothers lost her ring in making the masa part. So, when I saw you had your rings off, I thought about that little book and then you said that about remembering to take them off. lol!! What a great video. Tamales sure take a lot of time to make. No wonder it's a Christmas treat!!
Just wanted to let you know that I've made these tamales twice since watching your video. The first time they took forever to cook because our steamer was not big enough & I squeezed them in to tight. They were very good after they finally cooked. We recently bought an Instant Pot & we steamed our second batch in the pot & they turned out terrific! I cooked my meat in the Instant Pot and that was a real time saver step. Thanks so much for this great recipe.
Wow. You make 'em almost exactly like my wife does! Spreader and everything. Last time she made them, (13 dozen) I stole a bit of the prepared masa, rolled it into a few little balls, shoved a jalapeno in some, & a little meat in others, & dropped them into a deep fry. The fam went nuts over them!
I remember when I was a little girl, my grandma, my aunts, and my mom would get together and make tamales during Christmas! It was so labor intensive they formed a production line. My grandma would work for two days to make those tamales. Like you she made the meat one day and assembled the next. Thank you for sharing this, it really brought back memories 🥰🥰
MASA is Spanish for DOUGH, it's cute how she says "Masa Dough" it's like saying "Dough Dough". If I didn't know any better, I would think they are Mr & Mrs "Moreno" (because Moreno is Spanish for Brown) I've seen lots of folks making a Tex-Mex or an Americanized version of Tamales, but this was the first time I've seen white folks making "100% Authentic Mexican Tamales". My maiden name is Moreno and my dad's nickname was Mr.Brown by his grandkids and neighbors lol. I absolutely loved this recipe and will give it a try myself. This video has the feeling of watching one of my Tias cooking.

As a Mexican woman, I learned how to make these as a young child with my Grandmother, my Mom and her 5 sisters. It is indeed a huge undertaking and we did it as an assembly line. I can tell you, the masa spreader is BRILLIANT! Going to get one of those!!! Thanks for the vid!

As a small child I lived in Vicksburg, MS and remember my father buying Tamale’s from Solly who sold them from a cart on the corner. The decedents still sell them in a storefront now in Vicksburg. Oh NO!!! I have been steaming my tamales for only 30 minutes!! I have always bragged about how moist and tender they were! Well, I guess so if I was serving and eating them RAW! I had no idea. I know that steam cooks really hot, and I just figured that was all they needed. Thanks for setting me straight. 30 minutes is a long way from 1.5 hours!!!!

Wow I appreciate this video so much. I’m in Indiana, near Chicago and grew up eating homemade tamales on holidays. We’d gather around the kitchen table and work in an assembly line fashion. Really good memories. I’ve never made them myself and I’m almost 60! I think it’s time !

I learned to make tamales from a dear friend, and even though it's a time consuming project they are sooo much better than store bought tamales. My friend would buy the masa dough from a Mexican restaurant, so I'm glad you showed how to make the dough.I've noticed with masa it soaks up a lot of liquid.

I am Mexican. Love you love our tamales ! But have you ever had Salvodorean tamales ? It's a different texture , flavor. OMG ! when I lived in Los Angeles I would buy them from the corner tamale lady then go get fresh 6in French rolls or Frances how they are known in El Salvador. Cut them open , put the tamale in there like a sandwich, put some tapatio sauce for spice ! OMG it's a little piece of goodness 😙
Wow...that masa spreader is amazing. That's the hardest part was spreading the husks, I'm going to order one. I run the cooked meat through the grinder attachment of my Kitchen Aid mixer. A couple years I smoked the pork to about half done on my smoker then finished off in my Nesco Roaster oven to get the broth. A friend of mine would add a treat to each tamale like an olive or a thin slice of pickled carrot, or a slice of chili pepper, so it was fun to see what you'd get when serving them up. Tamalies freeze and microwave very well. I'll definitely be making some as soon as I get my smash spreader. Thanks for the video.

I was born and raised on the Northside of Houston. My neighbors make tamales about twice a year, once being around Christmas time, and they always make a lot! I can eat me some good homemade pork tamales! I’ve never attempted to make them myself because I’ve always heard it’s a long process! I never asked what all goes into making them, but now I see what they mean when they say, it’s a process. Bless you for taking the time to make them for your family, and for getting this on video. @@WhippoorwillHoller You can make one out of a plastic cover from a coffee can !! The ladies at the local tamale factory use them. When I saw it I asked, because I always used a large spoon !! This contraption works great, and its not hard to make plus darn near free if ya buy coffee!! Luv Ya. !!
My mom would chunk, not shred, her pork , then fry it and boil it, and make the sauce the consistency of gravy and mix the two together. The masa, we make with lard and broth from the pork, too. They look yummy.

We grew up eating these every Christmas! My mom would make them every year - so good!! She is now 86, so Mom makes the fillings and all of us and our children soak the husks, spread the masa and stuff 'em - SO fun and SO good!!! (We are native Texans who live in Houston!)

I love tamales! I've seen tamales cooked in a red "sauce" also. I tried making tamales once, but decided it was a whole lot of work. Yours look really good.

You are speaking my language. I love Tamales, and make them every year. My Mother is Mexican and I learned so much from her and her Family, My Gramma was such a great cook from the garden to the table every meal.
Commendable video. My nana was from Sonora, Mexico and taught my mama who taught me. We add a black olive to ours. Don't know why but its tradition to us ! We use a blend of dry New Mexico and dry California chile pods for our sauce. Half and half for heat and flavor is what my mama always said. Loved your version, Going to try it too. Wow! What a lot of work. I used to buy homemade tamales from a coworker whose church sold them at Christmas time for a fundraiser. Nothing like homemade tamales - they were our regular Christmas Eve supper. Never realized how much work went into them. I might get brave and try it for my family.

I made tamales once 25+ years ago, never having seen em made or a recipe I winged it. I made pork, chicken & beef. I seasoned them to taste, added seasoning to the masa & chicken broth. I made a mess Makin the tamales and made them fat lol! I took em to my experienced tamales makin friends & told its my first attempt. They laughed because they were lumpy and fat, didn't think they'd be good. Well those ladies about fell over & admitted they were better than theirs. I haven't made any since, but seeing that spreader now I want to try again. GREAT VIDEO!

Oh YIKES! I never knew how to make tamales! I tried them once in my early 20's. We had no Mexican restaurants in our small town at that time so I drove with a couple friends to a larger town. BUT, having never even seen a tamale, I ate the whole thing, husk and all. Well, not all of it. Worst thing I ever ate. Or so I thought. Now that I see both how to make AND eat it, I'm going to be trying this next time pork butt goes on sale. I like to cook it in the crock pot, too, but have always used a can of A&W root beer rather than the beef broth, and put the onion in rings on the bottom. Your way looks fabulous!! We have been buying them from a little elderly lady, but she is in poor health, so I was worrying about how I was going to get tamales for this year, and there you were, showing us how, step by step! Hubby and I just made them and ftoze some for Xmas.....took us most of the day with making the chile. I cooked the pork overnight in crock pot too . I put half of my chile in the Masa. I want flavor in each bite . They came out great....💕❄☃️love your vlogs Mrs. Lori.

Tamales are my favorite comfort food, haha not pasta not ice cream, haha but i haven’t made any in a long time, and the tamale masa spreader is a real ingenious way to speed up the tedious process. I want to thank you for this video. I have made them 2x in my life once about 10 years ago. They where OK but not like the lovely mexican ladies at my church. So I tried again about a month ago, they were a little better. Then I found this and watch it and saw what I was doing wrong. We love them but I buy them from the church ladies. Now I am ready to try again!!!! I have all the stuff even saved my meat, and corn husk just need to make the sauce. Again ty ty ty .

I'm sorry Melinda, you can use your favorite chilies, I use Anaheim, Poblanos, Hatch green chilies, I'll have to go back to the video, I thought I may have put the recipe in the description box, if I didnt, shame on me. And steam them, for an hour, check one, if not done, go another 30 minutes. It is a labor of love, xoxoxo

I loved watching your video on making tamales. My grandmother would make 5o pounds of masa at a time . We were up all night! In yakima where I live we can go and purchase fresh white or yellow masa. Some things were different , they looked delicious. My grandmother also made sweet tamales. You didn't add the chili mixture to the masa. We added sugar, anise, and raisins. They are so good for breakfast and a cup of coffee. I love watching you and your husband together. My husband would always help me too. God bless you all.

I am Mexican. Love you love our tamales ! But have you ever had Salvodorean tamales ? It's a different texture , flavor. OMG ! when I lived in Los Angeles I would buy them from the corner tamale lady then go get fresh 6in French rolls or Frances how they are known in El Salvador. Cut them open , put the tamale in there like a sandwich, put some tapatio sauce for spice ! OMG it's a little piece of goodness 😙
Wow...that masa spreader is amazing. That's the hardest part was spreading the husks, I'm going to order one. I run the cooked meat through the grinder attachment of my Kitchen Aid mixer. A couple years I smoked the pork to about half done on my smoker then finished off in my Nesco Roaster oven to get the broth. A friend of mine would add a treat to each tamale like an olive or a thin slice of pickled carrot, or a slice of chili pepper, so it was fun to see what you'd get when serving them up. Tamalies freeze and microwave very well. I'll definitely be making some as soon as I get my smash spreader. Thanks for the video.

I had an aunt, Billie Jean and Gordon Sherwood, who lived in Pasadena, Texas for many years. They later moved to Lake Livingston, in Livingston, Texas after retirement. I was born and raised on the Northside of Houston. My neighbors make tamales about twice a year, once being around Christmas time, and they always make a lot! I can eat me some good homemade pork tamales! I’ve never attempted to make them myself because I’ve always heard it’s a long process! I never asked what all goes into making them, but now I see what they mean when they say, it’s a process. Bless you for taking the time to make them for your family, and for getting this on video. @@WhippoorwillHoller You can make one out of a plastic cover from a coffee can !! The ladies at the local tamale factory use them. When I saw it I asked, because I always used a large spoon !! This contraption works great, and its not hard to make plus darn near free if ya buy coffee!! Luv Ya. !!
My mom would chunk, not shred, her pork , then fry it and boil it, and make the sauce the consistency of gravy and mix the two together. The masa, we make with lard and broth from the pork, too. They look yummy.

We grew up eating these every Christmas! My mom would make them every year - so good!! She is now 86, so Mom makes the fillings and all of us and our children soak the husks, spread the masa and stuff 'em - SO fun and SO good!!! (We are native Texans who live in Houston!)

I love tamales! I've seen tamales cooked in a red "sauce" also. I tried making tamales once, but decided it was a whole lot of work. Yours look really good.

You are speaking my language. I love Tamales, and make them every year. My Mother is Mexican and I learned so much from her and her Family, My Gramma was such a great cook from the garden to the table every meal.

Commendable video. My nana was from Sonora, Mexico and taught my mama who taught me. We add a black olive to ours. Don't know why but its tradition to us ! We use a blend of dry New Mexico and dry California chile pods for our sauce. Half and half for heat and flavor is what my mama always said. Loved your version, Going to try it too. Wow! What a lot of work. I used to buy homemade tamales from a coworker whose church sold them at Christmas time for a fundraiser. Nothing like homemade tamales - they were our regular Christmas Eve supper. Never realized how much work went into them. I might get brave and try it for my family.

I made tamales once 25+ years ago, never having seen em made or a recipe I winged it. I made pork, chicken & beef. I seasoned them to taste, added seasoning to the masa & chicken broth. I made a mess Makin the tamales and made them fat lol!
I took em to my experienced tamales makin friends & told its my first attempt. They laughed because they were lumpy and fat, didn't think they'd be good.
Well those ladies about fell over & admitted they were better than theirs. I haven't made any since, but seeing that spreader now I want to try again. GREAT VIDEO!

Oh YIKES! I never knew how to make tamales! I tried them once in my early 20's. We had no Mexican restaurants in our small town at that time so I drove with a couple friends to a larger town. BUT, having never even seen a tamale, I ate the whole thing, husk and all. Well, not all of it. Worst thing I ever ate. Or so I thought. Now that I see both how to make AND eat it, I'm going to be trying this next time pork butt goes on sale. I like to cook it in the crock pot, too, but have always used a can of A&W root beer rather than the beef broth, and put the onion in rings on the bottom. Your way looks fabulous!! I used your tamale recipe and made 3 1/2 dozen, it took all day, but I am thrilled to learn how to do it! Our family all come for Christmas, and the tamales are always the hit of the meal! We have been buying them from a little elderly lady, but she is in poor health, so I was worrying about how I was going to get tamales for this year, and there you were, showing us how, step by step! Now that I know how, I think I will be able to do them faster for Christmas! My family and I thank you! God bless you!

Hubby and I just made them and ftoze some for Xmas.....took us most of the day with making the chile. I cooked the pork overnight in crock pot too . I put half of my chile in the Masa. I want flavor in each bite . They came out great....💕❄☃️love your vlogs Mrs. Lori.

Tamales are my favorite comfort food, haha not pasta not ice cream, haha but i haven’t made any in a long time, and the tamale masa spreader is a real ingenious way to speed up the tedious process. I want to thank you for this video. I have made them 2x in my life once about 10 years ago. They where OK but not like the lovely mexican ladies at my church. So I tried again about a month ago, they were a little better. Then I found this and watch it and saw what I was doing wrong. We love them but I buy them from the church ladies. Now I am ready to try again!!!! I have all the stuff even saved my meat, and corn husk just need to make the sauce. Again ty ty ty .

I'm sorry Melinda, you can use your favorite chilies, I use Anaheim, Poblanos, Hatch green chilies, I'll have to go back to the video, I thought I may have put the recipe in the description box, if I didnt, shame on me. And steam them, for an hour, check one, if not done, go another 30 minutes. It is a labor of love, xoxoxo

Excellent. I made some Tamales about 1-1/2 years ago. I didn't have the Tamale Masa Spreader, so I used an off-set spatula instead. I have since bought the Spreader. I think it's time for me to make Tamales again. Thanks for sharing this video, Lori. Much appreciated.

I loved watching your video on making tamales. My grandmother would make 5o pounds of masa at a time . We were up all night! In yakima where I live we can go and purchase fresh white or yellow masa. Some things were different , they looked delicious. My grandmother also made sweet tamales. You didn't add the chili mixture to the masa. We added sugar, anise, and raisins. They are so good for breakfast and a cup of coffee. I love watching you and your husband together. My husband would always help me too. God bless you all.
