  • Here you get my recipe for the most delicious homemade doughnuts full of flavor, soft, and have a juicy and airy crumb. Making homemade doughnuts are actually easier than you think. The hardest thing about making doughnuts is the long raise time. Making Berliner requires a little patience, as they would like to raise to become delicious and airy.

    For 16 pcs doughnuts, you will need:
    525 grams (4 1/4 cups or 18.5 oz) all-purpose flour or bread flour
    180 grams (3/4 cup or 9.4 oz) milk, lukewarm (I use whole milk with 3.5% milkfat)
    7 grams (2 1/4 tsp) instant dry yeast (or 29 grams fresh yeast or 8 grams active dry yeast)
    60 grams (1/4 cup + 1 tbsp or 2.11 oz) light brown sugar
    1 tsp salt
    3 large eggs, room temperature
    100 grams (7 tbsp or 3.5 oz) butter, softened
    1 tsp vanilla sugar (optional)
    Other ingredients
    oil, for frying
    Vanilla cream filling (click the link • Donut Filling II How t... for the recipe)
    jam or Nutella, for filling
    granulated white sugar for coating
    powdered sugar, for dusting
    Nutella coating: 3-4 tbsp heavy cream, 3 tbsp cocoa powder, 1 tbsp Nutella, 3/4 cup powdered sugar
    Chocolate coating: 3-4 tbsp heavy cream, 4 tbsp cocoa powder, 3/4 cup powdered sugar
    Preparing the dough:
    In a small saucepan, warm the milk until it is lukewarm. Make sure your butter and eggs are at room temperature.
    Place flour, sugar, salt, and instant dry yeast in the bowl of a stand mixer. Stir and make a well, then add warm milk and knead the dough on a low level. Add 1 egg at a time. Knead the dough for 5 minutes until you have a smooth and firm dough. Add 1 tbsp butter at a time as you knead. Continue kneading until everything is added (approx. 15 minutes) and knead until the dough becomes elastic and is no longer sticky and no longer torn. Take the windowpane test.     Take the dough out of the bowl, shape it into a ball and place it in a large bowl (greased it a little). Cover with a kitchen towel or plastic film and allow to rise for approx-30 minutes at room temperature.
    Forming the dough:
    Put 16 wax papers on baking trays. I used 3 baking trays.
    Punch the dough down and weigh the whole dough and divide it into 16 portions. Shape the dough pieces into small balls and place them with the closure downwards, with a sufficient distance between them, on the prepared baking trays. Cover the dough pieces with plastic film for 3 to 4 hours on a countertop, or 45 minutes to 1 hour in a warm place, until they are doubled in size. But still, check your dough from time to time because many factors will determine the length of time. Which yeast was used (regular or quick rise), if the yeast was fresh or old (older yeast doesn’t work as well, or sometimes not at all), and your kitchen’s temperature.
    Meanwhile, you can place the jam or Nutella in a piping bag with a long and thin spout or prepare your coating. Prepare the sugar on a plate.
    Frying:
    Put enough oil in a large pan or deep fryer and bring a maximum of heat to 170 degrees Celcius. Slide the doughnuts on their papers into the hot oil, use tongs to pluck out the papers, which should float free within seconds. Fry 2 to 3 minutes per side, or fry until slightly golden. Wooden sticks are ideal for turning. Watch the video tutorial to see how I fry my doughnuts.
    After frying, use a slotted spoon and remove the Berliner Doughnuts from the oil and drain well on kitchen paper. Repeat the same frying method until you have fried all your doughnuts.
    Pipe the filling into the Berliner’s edge and turn them in the prepared sugar, and dust with a little powdered sugar. Berliner should be a little warm when rolled in sugar so that the sugar sticks better.

    This is the best Donuts I have made since trying to perfect my skill. Bear in mind I mixed by hand because I cant afford an electric mixer right now. I was blown away by the outcome.       @@fildankitchen paula, when kneading the dough for the first time, i have come across a term of over kneading an suggestions of kneading then letting it rest and then knead again. any advice?

      Hi again 😊 I’m not expert in baking but yes letting the over knead dough to rest and rise again can get the dough to relax a little. And to avoid this to happen, I always recommend to use the gluten stretch test or the windowpane stretch test, where you take a piece of the dough and gently stretch it. If the dough tears then the gluten is not develop enough and it needs more kneading. 👍🏼 When using my stand mixer, I usually knead my dough for 8 to 10 minutes then I do the gluten test. When kneading by hand - when I can feel the dough is starting to get smooth then I take the gluten test. 👍🏼😊 I hope, I answer your question.

      Hi sis thank you 🤗♥️ I really recommend na gumamit ng stand mixer kasi medyo sticky ung dough. Pero kung wala naman stand mixer pwede din hand knead pero mtrabaho kaya iready muna braso mo sis 😅
      Ganito gawin mo sis kung by hand ang gagawin mong pgkknead:
      1. In a large bowl, i add half of the flour, sugar, salt, and instant dry yeast. Using a spatula (ung matibay) mix the dry ingredients.
      2. Then in another bowl, icombine mo ang warm milk and eggs.
      3. Add mo ang wet ingredients (step 2) sa dry ingredients (step 1). Mix mo ulit using your spatula then habang hinahalo mo add mo slowly ung natitirang flour then continue lang sa pagmix hanggang mgcombine na ang mga ingredients.
      4. Then knead muna ang dough (sa bowl) for 15 to 20 minutes. Kung medyo sticky and dough igrease muna lang hands mo ng oil.
      5. Then gradually add ung softened butter sis habang minamasa mo ung dough hanggang sure muna na combine na talaga ung butter. Siguro another 15 to 20 minutes again.
      6. Take a windowpane stretch test para icheck kung ready na ung dough. Pagready na transfer muna ung dough sa new bowl (greased with oil) then follow muna sis ung nasa recipe ko 👍🏼😊

    We just use biscuit or croissant dough you find in the refrigeration section of your grocer. You know, Pillsbury. Form it in balls or however you want, or roll it out, cut it twist it. I use cookie cutters too, to make shapes, then deep fry like here and sugar coat, chocolate coat, very yummy. A quicker way for a fast treat!

    I tried this recipe and it came out amazing. Literally was melting in mouth. I was so lazy to make custard cream so just tossed it with cinnamon sugar. And for half of the dough, i shaped in a bun and baked it with egg wash and super soft buns are ready for breakfast. Thank you so much for an amazing recipe. HUGS*

      Hi 👋🏼 I think each dough weighed around 64 grams 👍🏼😊 What I do is I weigh the whole dough first (after I punch the dough) and then divide it into 16 or 18 or 12 🤗
      Oh I am sure you will like my Doughnut recipe 👍🏼they are my family’s favorite 🤤😍

      Hi Bkmii 😊 Thank you for your nice comment 🥰 Yes, I always use my kitchen scale when dividing my dough. I usually weigh the whole dough first then divide it into the number of doughnut portions that I want to make fx 12 or 16 pcs 👍🏼😊

      Hello Caroline 😊 Yes, you can also knead this dough by hand 👍 the dough is very soft and sticky but just continue kneading until it becomes smooth and passes the windowpane test 😊

      Divide everything (all of the ingredients individually by 2) except yeast , you must be using 7 grams yeast even after halved recipe

      Yes, I like using bread flour 👍🏼😊 It really yields softer and airy yeasted breads but for this doughnuts I only used all-purpose flour ☺️ if you dont have all-purpose flour, I think you can also use bread flour for making donuts 👍🏼

    Hi there! A quick question, May I know if the measurement is fixed for the yeast (aside from dividing or multiplying individually for each measurement except the yeast) doesn’t matter if I’m doubling halving the quantity of bombolonis I’m making?

      Not necessarily. Keep in mind elevation, humidity, etc can play a role on how yeast affects the end result of your donut. You can certainly adjust to your liking after trying this recipe. I didn't need to as they came out perfect. Good luck ;))

      Hello Patti 😊 My donut doughs they are so light and airy so if I don’t use wax paper when transferring them to the oil, they will deflate and loss their round form. So, I always use food safe wax paper when frying my donuts. 😊
