If you hold a trim up under the overhang (feed it through the brackets), mark the locations of brackets and back cut reliefs in the trim, you can hide the ugly and have continuous trim. @ 13:45 the trap under your right hand has a wider female end which is to accept the male drain "tail piece". This means you installed it backwards. This can cause slow draining, gurgling and even emptying of the trap completely. BTW the cheater vent height under the sink should be as high as possible and no less than 4" above the branch drain.. If it ever wears out, and is not above the water level of the sink water level, it has the potential of flooding.
Yes, after the drain tail piece with the hose connector for the dish washer was installed, the trap should have been reversed and connected. The extension and cutting were unnecessary.
Pull the brackets off and trim behind horizontally and vertically behind the brackets. The trim will disappear when you paint it. You’ll be able to see under the counter when you’re sitting in the living room.

To lower the microwave, just order a 6 inch valance board from the cabinet company and put that between the cabinet and the microwave. That should still keep it off of the water spout yet. That’ll Get it down lower to make it more usable . I think the code minimum is 18” off the stove top.

I kid you not and speak from experience as my 3 dogs (as big or bigger than yours) can open those handles and my cat (who is too light) hangs from the handles
Make sure you seal where you router for the sink and use food grade caulking as it's where you wife prepares food as normal caulking is dangerous to humans
Just put some thin lattice or doorstop up under the counter to cover the gap and paint it white. I would just do it between the brackets...wont be that noticable.
Depending how much flooring is left? Why not tie in the look up along the side, or get some toung and grove boards and stain the same as your flooring for the look on your island?

High microwaves are dangerous. My friend tipped hot sauce on herself trying to take her dinner out of the microwave and got third degree burns. Hospital said it's a common accident. I would just move it to a blank space on the wall and lower it to a safe height. Not worth the risk for aesthetics.

The brackets are thin enough to run the trim right over them, just notch the trim out a little.
That sink is amazing. I would’ve put silicone around it to prevent water from getting under the edges.

Looking very nice, I would have sealed that wood you routed out to keep water from damaging the butcher block underneath but looks great.

You put the p-trap on backwards. The tail piece goes inside the big part of trap. Sink turned out good.

A bead of mastic and a lick of paint will disguise that joint simple.
I'd use what they used to call screen or scribe moulding between the brackets. Just painting the OSB edge will surely do it too.
