2 lbs pork belly ⅓ cup water 50 g rock or brown sugar 3 slices ginger 3 cloves garlic 2 bay leaves 2 star anise 3 tbsp shaoxing rice wine 2 tbsp soy sauce 2½ tbsp dark soy sauce 3 cups water green onions
there's no reason you couldn't, but pork belly is a very fatty cut of meat. a lot of fatty beef cuts also have a ton of connective tissue, which takes really long cooking to dissolve. beef short ribs would probably be your best bet.
