The spices added at 0:49, do you use them again at 2:20 or are they new ones? Do you use the peppers only during the 5 min blanching in the beginning?

That seems to be straightforward and delicious.
As I have to watch my intake of saturated fat, I'ld like to know whether I occasionally could prepare it with skin-on chicken thighs.
I'd say it probably defeats the purpose of the dish. The fat on the pork belly is what makes this dish!
