It depends on your location more than anything else. Fruits, vegetables, and beans are ridiculously cheap in plenty of places all over the world. It’s also about priorities, if someone is vegan due to their morals, they’ll shift priorities to be able to afford the fruits & veggies. If you’re broke enough to require living off $1 menu items, then yeah you’ll definitely have trouble though at that point you’re not eating balanced either.
I’m not disagreeing with you but I feel like it’s also interesting to think about the fact that meat isn’t as common in a lot of the poorest places on earth and that many less developed countries rely much more heavily on grains and other foods then meat.
