I live in Canada so we only have 500 watts on tap. I would like 500 watts nominal and 1500 watts peak so it climbs hills more effectively. Other than that I agree with everything about the handling you mentioned. My RW4 rides very stable even with lots of weight on the back. It handles nicely in spite of the length. I installed the Suntour suspension seat post on mine and it is now a pleasure to ride. Because of it I even ride just because I can instead of only riding when I need to.
Not too sure about dual battery option or what you mean by add a sprocket or fender guard. A brake upgrade can absolutely be done to this just like any other bike.

Can you add 2 batteries? Can you Ada sprocket hydraulic brakes, feeder guard . This concerns me.

It depends on your pedal assist level/if you are using throttle and many other factors. but it ranges from 24-45 mi
