man I love living here in the middle east because the beef here is extremely cheap and despite being local has incredible marbling but watching you guys cook pork on an open fire makes me miss my farm back home and your right about cooking all day being fun. I guess living in the city you work all day earning money but living in a farm you just worry about what's food for tomorrow

Such a great method using the PolarGrill. It looks very communal. Can easily imagine a bunch of friends sitting around the grill, having great food and relaxing around the fire into the evening. PolarGrill need to start exporting or licensing the designs.
I just recently started cooking on my open fire pit an using my kettle lid to keep heat in , so far I’ve done chicken , ribs , an shish kabobs , just something about it I enjoy cooking on it more , the food taste amazing so much better then my charcoal grill. I’m thinking about getting a pit boss pellet smoker because I don’t know how cooking a brisket on an open pit would turn out.
After watching this I'm actually thinking of buying one of those to our summer house. Great stuff. Really like these experiments you have started to do. Keep on grillin'

Pitmaster! What's up?! I smoked a whole chicken yesterday with the Carolina sauce and it was amazing. I used the charcoal snake method with pecan wood chunks, in a Weber 22" kettle. I did not make a long enough snake so I had to finish it in the oven. Still awesome though. Have you ever used the charcoal snake technique? Could be an interesting video.

My Dad loved using mesquite wood & we lived in Arizona so we had an ample supply. He would always smoke the turkey for Thanksgiving & Christmas!!! But he used a custom made, oversized, Weber grill so it was encased in smoke. (it held FOUR 20 lb turkeys!) Can you get ahold of mesquite wood there?
I try to have my meats fully thawed before brining or marinating; I don't think those processes penetrate frozen meat well, so time is wasted until it thaws out. The food turned out great, though. How long did it cook, and how much wood did it take to complete that meal?
For me barbecue is like a event where you might cook all day for brunch, lunch and dinner and talking and drink with your friends apreciating de fire pit waiting for slow cooking process and deliciours flavors of meat. Also, at long the process you need put some small pieces of meats like appetizers that cook more fast. I like your videos e kind of pits that your have.

This is like a duck oven- the one I’ve used was a bricked in version with opening to the front, produced great pork texture and amazing crackling.

gas, wood, charcoal, it gives different flavors to the same food prepared the same way. so in other words, all are good in their own way
You're right. Gas gives it propane flavor
I'd be cautious about different fuels because of incomplete combustion producing "soot" which coats the food and potentially is injested.
